Con los procedimientos del Sr. Appert es posible conservar tanto verduras, legumbres, huevos, leche, carnes, pescados como guisos, sopas, bebidas y jugos entre otros alimentos y comidas.El propósito del Sr. Appert era "conservar, casi gratuitamente y por varios años, en su frescura y con sus propiedades naturales, todos los alimentos, sustancias vegetales y animales, sin excepción". También se preocupó por aplicar procedimientos que además de mantener las propiedades nutricionales de los alimentos, conservaran el color, el sabor y la textura.En reconocimiento por su trabajo exitoso de conservar alimentos acercados lo más posible al que la naturaleza nos ofrece, el Sr. Appert, fue premiado por el gobierno de Francia con la suma de doce mil francos por la exitosa conservación de sustancias vegetales y animales que permitieron a los marineros realizar largas travesías sin enfermar de escorbuto y de gozar de alimentos saludables como si estuvieran en tierra.Con este libro, ahora podrá elaborar muy fácilmente conservas exitosas saludables de todo tipo de alimentos ya sea para su propio consumo o para iniciar un negocio.
