Excerpt from Two Hundred and Five Recipes: Tried and Proven by Trinity's Ladies One pint grated corn, three pints boiling water or stock, one pint of hot milk, three tablespoons of butter, two even tablespoons of flour, yolks of two eggs, salt and pepper to suit the taste. Put the cobs into the water or stock and boil half an hour. Remove them and put in the corn and boil until soft (about twenty minutes). Let it simmer While you rub the butter and flour together; add this and stir until it thickens, and then put in the boiling milk and cool a minute, and add the beaten yolks and serve immediately. The recipes took almost fifty years of gathering together to bring this cookbook to fruition. Some had to be updated for more modern tastes while still keeping them true to their origins. The authors parents owned a delicatessen in Brooklyn, New York, and later on Long Island, New York, and from them came wonderful salad and meat recipes. Also included are the catering recipes from the delicatessen and the recipes the author used in her cake decorating and catering businesses. Please enjoy each and every one!
