Two of her published books on North-West Queensland revolve around biographies.An extensive trip overseas in 2012 has produced a combined publication for Di and her husband Bill. Called "Counting Our Blessings, 69 Days in Europe" it is due to be launched mid-year in Brisbane. Di maintains that travelling with her geologist husband is the ultimate joy because of his knowledge and his curiosity to learn. They have four creative daughters of whom they are rightly proud. Bill and Di now live a very full life in Brisbane, drinking in the love of their two grandchildren, as well as walking through the magic forests of that part of the world.

Until recently, historians have tended to overlook eating, and yet, through meat pies and lamingtons, Symons tells the history of Australia gastronomically. He challenges myths such as that Australia is 'too young' for a national cuisine, and that immigration caused the restaurant boom. Symons shows us that Australia is unique because its citizens have not developed a true contact with the land, have not had a peasant society. Australians have enjoyed plenty to eat, but food had to be portable: witness the weekly rations of mutton, flour, tea and sugar that made early settlers a mobile army clearing a whole continent; and the tins of jam, condensed milk, camp pie and bottles of tomato sauce and beer that turned its citizens into early suburbanites. But good food has never come from factory farms, process lines, supermarkets and fast-food chains. Only when we enjoy a diet of fresh, local produce treated with proper respect, when we learn from peasants, might we at last have found a national cuisine and cultivated a continent.

This is a long novel, a tapestry of life in rural Australia with all the characters, the localities, the climate and the social life so finely pictured that not one single aspect of the portrayal jars. Reminiscent of John Steinbeck's wonderful pen pictures of rural America and the unique characters that dwelt therein. The story line is good and well maintained. The language is rough but not aggressively Australian and laced with typical wit. The racial prejudice is infiltrated throughout the story so imperceptibly that it becomes almost acceptable as a normal attitude, as does the behavior of the senior policeman in the small station. It is only as the story draws to its rather horrifying conclusion that the reader begins to realize its skillful condemnation of the average Australian's apathy towards bad social attitudes and political intrigue. This is not to suggest the tale degenerates into a lecture on morality. It is an excellent read throughout.
