THE GEECHEE COOKBOOK My Official Geechee Cookbook highlights Geechee low-country cooking and food preparations that were popularized on the Georgias barrier sea islands from the early 1700s until up to the end-of-the Civil War. A special effort has been made to include the similarities of possible African culture and slaves tradition on each island. Recorded history has been included about each area. Although much of the history has been lost, the slaves made do with what they were able to simulate from their culture. The efforts in this cookbook have been dedicated to the impact of the Geechee contributions to the state of Georgia. Some people in Georgia call themselves Gullah. However, my grandmother was a Geechee. The research honors her heritage. Gullahs are popular in the low country areas of the Carolinas. My Official Geechee Cookbook is a result of my research with certain people who said they were Geechee and collected recipes from these people. The cookbook is not comprehensive of all Geeches recipes. Historical influences surrounding the Geechees survival on the Georgia sea coastline from slavery until present day have been examined.

Georgia’s Historical Recipes is an exploration of our state’s oldest recipes from the antebellum period through World War II, as painstakingly researched by Georgia archivist Valerie J. Frey. This volume begins with a discussion of old recipes as primary sources and what they can tell us about the history and culture of their era and how to bring them to life in modern kitchens. Frey then moves into fifty sections that can be read alone yet allow readers to build an understanding of how foodways evolved over time. Some sections highlight a single recipe, illustrating how changes in technology, agriculture, transportation, communication, and social patterns led to changes in Georgia kitchens. Most of the recipes are previously unpublished, waiting in archives to be rediscovered. Other sections explore our oldest cookbooks, offering biographical and cultural background information that makes them more meaningful. For the first time, Georgians have a list of the state’s early cookbooks and its cooking experts. Readers will learn where to find Georgia’s oldest recipes and discover many examples to whet their appetites literally and figuratively for a taste of Georgia’s past.

Food studies, once trendy, has settled into the public arena. In the academy, scholarship on food and literary culture constitutes a growing river within literary and cultural studies, but writing on African American food and dining remains a tributary. Recipes for Respect bridges this gap, illuminating the role of foodways in African American culture as well as the contributions of Black cooks and chefs to what has been considered the mainstream. Beginning in the early nineteenth century and continuing nearly to the present day, African Americans have often been stereotyped as illiterate kitchen geniuses. Rafia Zafar addresses this error, highlighting the long history of accomplished African Americans within our culinary traditions, as well as the literary and entrepreneurial strategies for civil rights and respectability woven into the written records of dining, cooking, and serving. Whether revealed in cookbooks or fiction, memoirs or hotel-keeping manuals, agricultural extension bulletins or library collections, foodways knowledge sustained Black strategies for self-reliance and dignity, the preservation of historical memory, and civil rights and social mobility. The cookbook genre is highly conventional with an orientation toward celebration and success. From glossy photographs to heartwarming stories and adjective-rich ingredient lists, the cookbook tradition primes readers for pleasure. Yet the overarching narrative of the region is often one of pain, loss, privation, exploitation, poverty, and suffering of various kinds. While some cookbook writers go to great lengths to avoid reminding readers of this painful past, others invoke that pain as a marker of southern authenticity. Still others use stories of southern suffering as an opportunity to make space for reconciliation, reparation, or apology for past wrongs. In Unpalatable: Stories of Pain and Pleasure in Southern Cookbooks, author Carrie Helms Tippen attempts to understand the unique rhetorical situation of the southern cookbook as it negotiates a tension between the expectations of the genre and the prevailing metanarratives of the southern experience, one focused on pleasure and the other rooted in pain. Through an analysis of commercially published “southern” cookbooks from the 1990s to the present, Tippen examines the range of rhetorical purposes and strategies writers have employed, some of which undermine the reality of a painful past and cause harm or violence, and others which serve as tools for truth and reconciliation.

Vibration Cooking was first published in 1970, not long after the term “soul food” gained common use. While critics were quick to categorize her as a proponent of soul food, Smart-Grosvenor wanted to keep the discussion of her cookbook/memoir focused on its message of food as a source of pride and validation of black womanhood and black “consciousness raising.” In 1959, at the age of nineteen, Smart-Grosvenor sailed to Europe, “where the bohemians lived and let live.” Among the cosmopolites of radical Paris, the Gullah girl from the South Carolina low country quickly realized that the most universal lingua franca is a well-cooked meal. As she recounts a cool cat’s nine lives as chanter, dancer, costume designer, and member of the Sun Ra Solar-Myth Arkestra, Smart-Grosvenor introduces us to a rich cast of characters. We meet Estella Smart, Vertamae’s grandmother and connoisseur of mountain oysters; Uncle Costen, who lived to be 112 and knew how to make Harriet Tubman Ragout; and Archie Shepp, responsible for Collard Greens à la Shepp, to name a few. She also tells us how poundcake got her a marriage proposal (she didn’t accept) and how she perfected omelettes in Paris, enchiladas in New Mexico, biscuits in Mississippi, and feijoida in Brazil. “When I cook, I never measure or weigh anything,” writes Smart-Grosvenor. “I cook by vibration.” This edition features a foreword by Psyche Williams-Forson placing the book in historical context and discussing Smart-Grosvenor’s approach to food and culture. A new preface by the author details how she came to write Vibration Cooking.
