"Particularly in relation to its political ties with China, Taiwan occupies an ambiguous political position in the eyes of the world. This thesis examines the relationship betwcen politics and food, with a focus on discussing the impc:"1:ance of both food consumption and its cultural symbolism within Taiwanese society. The discussion addresses how politics and food relate to each other in Taiwan, and illustrates how the need for food, together with its economic and symbolic power, make food an essential element of political control and negotiation, and a crucial ingredient of the political expression of power. Taiwan's history is one of colonisation, and it is with particular reference to this distinguishing fact that I discuss colonial Dutch and Japanese political influences on Taiwanese agriculture in order to explain how this affected the eating patterns of Taiwanese people. As politics and food have multiple connections, the imp0l1ance of political transformation in the developmental process of a food culture is thereby examined. The other important link between politics and food in Taiwan, a country which has been governed by several foreign powers, is with China, and with differing ethnic groups from within China who have wielded political influence over the development of Taiwanese food and foodways. Taiwan's food culture gives a prescient representation of the specific political influence afforded by control over food culture and foodways. By taking an historical approach which explores the evolution of food and foodways and its relation to political history in Taiwan this dissertation also demonstrates the significance of politics in relation to the development of a distinctive 'Taiwanese cuisine.' This approach ensures both a unique and much needed review of 'Taiwanese cuisine'. Many contemporary Taiwanese chefs and some scholars have discussed 'Taiwanese cuisine' but there has been no detailed discussion of the relationship between politics and Taiwanese food culture as it has affected the nature and history of this so-called, Taiwanese cuisine." -- abstract, leaves 5-6.
