The practice of cannibalism is in certain cultures rejected as evil, while in others it plays a central part in the ritual order. Anthropologists have offered various explanations for the existence of cannibalism, none of which, Peggy Sanday claims, is adequate. In this book she presents a new approach to understanding the phenomenon. Through a detailed examination of ritual cannibalism in selected tribal societies, and a comparison of those cases with others in which the practice is absent, she shows that cannibalism is closely linked to people's orientation to the world, and that it serves as a concrete device for distinguishing the 'cultural self' from the 'natural other'. Combining perspectives drawn from the work of Ricoeur, Freud, Hegel, and Jung and from symbolic anthropology, Sanday argues that ritual cannibalism is intimately connected both with the constructs by which the origin and continuity of life are understood and assured from one generation to the next and with the way in which that understanding is used to control the vital forces considered necessary for the cannibalism in a culture derives from basic human attitudes toward life and death, combined with the realities of the material world. As well as making an original contribution to the understanding of the significant human practice, Sanday also develops a theoretical argument of wider relevance to anthropologists, sociologists, and other readers interested in the function and meaning of cannibalism.

Cannibalisme, anthropophagie, homophagie humaine, autant de synonymes pour désigner l'habitude de manger sans répugnance de la chair humaine. Cette pratique aux motifs nombreux remonte à la nuit des temps et se retrouve à un moment ou à un autre dans toutes les parties du monde sans exception, y compris l'Europe de l'Ouest. Ce qui fit écrire à Voltaire : " Comment des hommes séparés les uns des autres par de si grandes distances ont-ils pu se réunir dans une si horrible coutume ? Faut-il alors croire qu'elle n'est pas absolument aussi opposée à la nature humaine qu'elle le paraît ? " Les dieux de nombreuses mythologies n'ont-ils pas de surcroît montré l'exemple en se dévorant entre eux ou en mangeant leurs propres enfants ? L'époque contemporaine semble offrir une résurgence notoire de cette pratique ancestrale. Depuis la fin de la Seconde Guerre mondiale, partout dans le monde, on signale des cas individuels ou collectifs de cannibalisme. Les raisons sont sensiblement les mêmes que par le passé : cruauté, sauvagerie, plaisir, gourmandise, médecine, vengeance, religiosité, démence, amours déviants, superstitions, nécessité vitale, etc. Quelles que soient les motivations qui ont poussé et continuent à pousser les hommes au cannibalisme, force est de constater que chaque peuple qui s'est livré à cette pratique a eu ses " recettes gastronomiques " destinées à mettre en exergue les goûts et les saveurs particulières de la viande humaine. Sexe, âge, parties corporelles destinées à la consommation sont pris en considération. Crue, saignante ou bien cuite, rôtie ou bouillie, grasse ou maigre, la chair humaine est préparée avec soin, car les cannibales se sont toujours attachés non seulement à la préparation et à l'assaisonnement mais également au service et à la présentation de leurs victuailles humaines. Là se tient peut-être la vraie différence et la supériorité de l'homme cannibale sur la bête carnivore.

L'anthropophagie (du grec ἄνθρωπος / anthrôpos, « être humain », et φαγία / phagía qui se rapporte à l'action de « consommer ») est une pratique qui consiste à consommer de la chair humaine. Il s'agit d'une forme de cannibalisme mais qui concerne exclusivement l'espèce humaine. On distingue l'endocannibalisme funéraire, qui consiste à manger les membres de son groupe humain, et l'exocannibalisme guerrier, qui consiste à manger des membres d'un autre groupe humain. Il semble que l'anthropophagie ait été pratiquée dès le Paléolithique. Des traces de dépeçage ont été observées sur des ossements humains préhistoriques, mais les indices en question ne sont toutefois pas des preuves d'anthropophagie. L'anthropophagie est considérée comme probable dans certains sites du Paléolithique inférieur comme Gran Dolina à Atapuerca en Espagne ou la Caune de l'Arago en France, du Paléolithique moyen comme la Baume Moula-Guercy à Soyons en France, dans des sites mésolithiques (grotte des Perrats à Agris) et dans des populations plus récentes nord-américaines (site de Mancos dans le Colorado). Si certaines cultures ont eu des pratiques cannibales socialement instituées, l'anthropophagie occasionnelle en cas de pénurie grave (famine ou de perte des réserves de nourriture sur un bateau) a été une pratique récurrente dans toutes les sociétés. L'anthropophagie comme pratique courante est suggérée par l'équipe du paléoanthropologue José María Bermúdez de Castro qui a réétudié les ossements de la grotte de Gran Dolina. On y trouve des os portant des traces de découpe faites par des outils en pierre et brisés comme pour en extraire la moelle, ou des crânes avec des marques de décapitation. Tuer des membres jeunes - et donc sans défense - de tribus rivales pour limiter la concurrence sur un même territoire, et consommer leur chair pour satisfaire les besoins en protéines, semblerait une stratégie répandue chez Homo antecessor.
