Banyak penelitian menunjukkan bahwa antosianin mempunyai aktivitas antioksidan yang tinggi. Buah-buahan yang berwarna ungu karena antosianin mempunyai aktivitas antioksidan yang jauh lebih tinggi daripada buah sejenis yang warnanya tidak ungu, misalnya pada buah anggur. Selain itu, sudah diketahui bahwa antosianin mempunyai peranan penting untuk kesehatan manusia, antara lain bila dikonsumsi secara teratur, dapat menurunkan risiko terjadinya jantung koroner, yang sangat dikenal dengan fenomena ‘French paradox’. Selain itu, antosianin juga dapat mencegah terjadinya beberapa jenis kanker. Dalam hal ini, banyak penelitian membuktikan bahwa ekstrak antosianin dari berbagai jenis buah dapat memerangi atau paling tidak memperlambat pertumbuhan sel-sel kanker, baik secara in-vitro terhadap beberapa jenis cell line maupun secara in-vivo dengan beberapa hewan percobaan, ataupun pada manusia sendiri, misalnya terhadap plasma darah atau LDL-nya. Antosianin juga mempunyai potensi sebagai pewarna alami yang aman untuk makanan. Hal ini sangat penting mengingat bahwa pewarna merah makanan yang banyak dipakai selama ini kurang aman bagi kesehatan. Bahkan, beberapa bersifat karsinogen. Pewarna makanan yang sebenarnya sudah dilarang oleh pemerintah, masih secara luas dijumpai penggunaannya oleh masyarakat, khususnya masyarakat kelas menengah ke bawah yang justru jumlahnya cukup banyak, dan juga banyak dijumpai masih digunakan pada makanan/jajanan anak-anak, generasi muda yang seharusnya dijauhkan dari makanan yang tidak aman. Oleh sebab itu, antosianin mempunyai potensi untuk menjauhkan anak-anak dari mengonsumsi pewarna merah yang tidak aman. Indonesia mempunyai potensi yang besar sebagai sumber penghasil antosianin, yaitu memiliki berbagai jenis buah dan sayur yang mengandung antosianin, baik dari tanaman asal Indonesia sendiri, seperti: buah duwet, jantung pisang, kulit rambutan, kulit manggis, kulit gowok, kulit terung, dan sebagainya; maupun dari tanaman yang mengandung antosianin dari daerah lain yang dapat tumbuh dengan baik di Indonesia, seperti buah anggur, bunga rosela, buah murbei, dan sebagainya. Penelitian terhadap tanaman-tanaman asli Indonesia belum secara tuntas dilakukan, apalagi penggunaan sesuai dengan potensinya. Fenomena ini seharusnya dapat membangkitkan minat dan kesadaran peneliti, masyarakat awam, ataupun para pengusaha di Indonesia untuk secara bersama-sama memanfaatkan potensi yang belum tergali ini sesuai dengan kapasitasnya masing-masing.
