Con il termine educare (dal latino ex-ducere, condurre fuori) si intende non un semplice trasferimento di nozioni, ma una “introduzione alla realtà totale” (Giussani, Il Rischio Educativo, Rizzoli, Milano 2005). Educare, al contrario della semplice trasmissione di informazioni (come accade nelle conferenze, nella lezione frontale, ecc.) ha luogo quando si costruisce un rapporto interpersonale, in cui ognuno dà qualcosa e qualcosa riceve. Ogni rapporto educativo implica una “terza presenza” verso cui guardano educatore e discepolo, una presenza rivelatrice di senso (Giussani, Il Rischio educativo, cit.) e, come amava ripetere il prete di Desio, “La realtà non è mai veramente affermata, se non è affermata l’esistenza del suo significato”. Se adottiamo questa impostazione nel campo dell’educazione nutrizionale, già prima di darne una compiuta definizione, possiamo assumere il punto di vista secondo cui il nutrizionista non impone una visione dettando linee-guida, ma verifica il rapporto tra i nutrienti e la salute alla luce delle nozioni di biochimica degli alimenti. A quest’ultima spetta, a nostro modo di vedere, il ruolo centrale del percorso formativo del nutrizionista. Ed è a questa “terza presenza” (la biochimica degli alimenti) alla quale ci riferiamo nel libro nel delineare i programmi di educazione nutrizionale e che costituisce una disciplina rivelatrice di senso.
