This open access book surveys drinking in Britain between the Licensing Act of 1869 and the wartime regulations imposed on alcohol production and consumption after 1914. This was a period marked by the expansion of the drink industry and by increasingly restrictive licensing laws. Politics and commerce co-existed with moral and medical concerns about drunkenness and combined, these factors pushed alcohol consumers into the public spotlight. Through an analysis of public and private records, medical texts and sociological studies, the book investigates the reasons why Victorians and Edwardians consumed alcohol in the ways that they did and explores the ideas about alcohol that circulated in the period. This book shows that they had many reasons for purchasing and consuming alcoholic substances and these were driven by broader social, cultural, medical and commercial factors. Although drunkenness may have been the most visible consequence of alcohol consumption, it was not the only type of drinking behaviour. Alcohol played an important social role in the everyday lives of Victorians and Edwardians where its consumption held many different meanings.

The distribution of food played a considerable yet largely unrecognized role in the economic history of Victorian and Edwardian Britain. In the midst of rapid urbanization and industrialization, retail competition intensified and the channels by which food made it to the market became vital to the country's economic success. Illustrating the pivotal importance of food distribution in Britain between 1830 and 1914, The Social Cost of Cheap Food argues that labour exploitation in the distribution system was the key to cheap food. Through an analysis of labour dynamics and institutional changes in the distributive sector, Sébastien Rioux demonstrates that economic development and the rising living standards of the working class were premised upon the growing insecurity and chronic poverty of street sellers, shop assistants, and small shopkeepers. Rioux reveals that food distribution, far from being a passive sphere of economic activity, provided a dynamic space for the reduction of food prices. This is the first scholarly treatment of the history of public eating in London in the Victorian and Edwardian eras. The quotidian nature of eating out during the working day or evening should not be allowed to obscure the significance of the restaurant (defined broadly, to encompass not merely the prestigious West End restaurant, but also the modest refreshment room, and even the street cart) as a critical component in the creation of modern metropolitan culture. The story of the London restaurant between the 1840s and the First World War serves as an exemplary site for mapping the expansion of commercial leisure, the increasing significance of the service sector, the introduction of technology, the democratization of the public sphere, changing gender roles, and the impact of immigration. The London Restaurant incorporates the notion of 'gastro-cosmopolitanism' to highlight the existence of a diverse culture in London in this period that requires us to think, not merely beyond the nation, but beyond empire. The restaurant also had an important role in contemporary debates about public health and the (sometimes conflicting, but no less often complementary) prerogatives of commerce, moral improvement, and liberal governance. The London Restaurant considers the restaurant as a business and a place of employment, as well as an important site for the emergence of new forms of metropolitan experience and identity. While focused on London, it illustrates the complex ways in which cultural and commercial forces were intertwined in modern Britain, and demonstrates the rewards of writing histories which recognize the interplay between broad, global forces and highly localized spaces.
