In recent years, the role of plant secondary metabolites as protective constituents in the human diet has been a growing area of research. Unlike the traditional vitamins, they are not essential for short-term wellbeing, but there is increasing evidence that modest long-term intakes can have favourable impacts on the incidence of cancers and many chronic diseases, including cardiovascular disease and type II diabetes, which are occurring in Western populations with increasing frequency. This book covers the latest science on the metabolism and potential health benefits of teas, cocoa, coffee and their extracts in the human diet. From an opening chapter tracing the origins of teas, cocoa and coffee as beverage, the book proceeds to explore the phytochemical content of coffee, cocoa and the various types of tea. The bioavailability of secondary metabolites from each of the beverages is then considered in depth, and related directly to their health benefits. Embracing the full range of tea, coffee and cocoa beverages and products, the book offers the most up-to-date and comprehensive treatment of these increasingly important dietary components. As the only book to bring together the latest information on the biochemistry and health benefits of teas, coffee and cocoa, this book is essential reading for food scientists and technologists involved in the production of tea, coffee and cocoa products. Nutritionists will value the book's health focus, while agricultural scientists working on the cultivation of these crops will prize its scope and depth of detail. It is also an important resource for all those who use functional ingredients in other products, whether they are based in industry or research.

Caffeine is the world's most popular drug! Almost all of us start our day with a jolt of caffeine from coffee, tea or cola. And many of us crave chocolate when we're stressed or depressed. Without it we're lethargic, head-achy and miserable. Why? Why do we crave caffeine? How much do we really know about our number one drug of choice? Here is the first natural, cultural, and artistic history of our favorite mood enhancer--how it was discovered, its early uses, and the unexpected parts it has played in medicine, religion, painting, poetry, learning, and love. Weinberg and Bealer tell an intriguing story of a remarkable substance that has figured prominently in the exchanges of trade and intelligence among nations and whose most common sources, coffee, tea, and chocolate, have been both promoted as productive of health and creativity and banned as corrupters of the body and mind or subverters of social order. Some Highlights From the World of Caffeine Balzac's addiction to caffeine drove him to eat coffee, as some schizophrenic patients are observed to do today, and may have killed him Mary Tuke breaks the male monopoly on tea in England in 1725 The ways caffeine functions as a smart pill Goethe's responsibility for the discovery of caffeine Did a mini Ice Age help bring coffee, tea and chocolate to popularity in Europe? What is the mystery of coffee's origin? As good as gold: the stories of how caffeine, in its various forms, was used as cash in China, Africa, Central America and Egypt What does the civet cat have to do with the most costly coffee on earth today? The World of Caffeine is a captivating tale of art and society -- from India to Balzac to cybercafes -- and the ultimate caffeine resource.

An Orchard Invisible written by Jonathan Silvertown and has been published by University of Chicago Press this book supported file pdf, txt, epub, kindle and other format this book has been release on 2009-08-01 with Science categories.

The story of seeds, in a nutshell, is a tale of evolution. From the tiny sesame that we sprinkle on our bagels to the forty-five-pound double coconut borne by the coco de mer tree, seeds are a perpetual reminder of the complexity and diversity of life on earth. With An Orchard Invisible, Jonathan Silvertown presents the oft-ignored seed with the natural history it deserves, one nearly as varied and surprising as the earth’s flora itself. Beginning with the evolution of the first seed plant from fernlike ancestors more than 360 million years ago, Silvertown carries his tale through epochs and around the globe. In a clear and engaging style, he delves into the science of seeds: How and why do some lie dormant for years on end? How did seeds evolve? The wide variety of uses that humans have developed for seeds of all sorts also receives a fascinating look, studded with examples, including foods, oils, perfumes, and pharmaceuticals. An able guide with an eye for the unusual, Silvertown is happy to take readers on unexpected—but always interesting—tangents, from Lyme disease to human color vision to the Salem witch trials. But he never lets us forget that the driving force behind the story of seeds—its theme, even—is evolution, with its irrepressible habit of stumbling upon new solutions to the challenges of life. "I have great faith in a seed," Thoreau wrote. "Convince me that you have a seed there, and I am prepared to expect wonders." Written with a scientist’s knowledge and a gardener’s delight, An Orchard Invisible offers those wonders in a package that will be irresistible to science buffs and green thumbs alike.
