This dissertation investigated some pre- and post-harvest strategies to improve price, carcass, and meat quality of cull dairy cows. Chapter 1 offers a dissertation overview, providing an outline for the contents of the manuscript. Chapter 2 provides an extensive literature review on cull dairy cows as a beef source, from the farm to the fork. Chapter 3 is a research chapter, dedicated to the evaluation of the effects of life history events on price and carcass quality of cull dairy cows. More specifically, canonical correlation analysis was used to investigate the association between adjusted price and carcass quality to be further used for multiple regression analysis. Results showed high canonical correlations between adjusted price and carcass quality traits. Additionally, life history events were shown to be good predictors of the price of cull dairy cows sold through auction markets. Next, in Chapter 4, an extension of the prediction study presented in Chapter 3 is provided, using machine learning approaches. The results show that the various models presented similar predictions performance, and that the most important predictor variables were related to seasonality, weight of the cow, and the culling reason. As a research component on post-harvest approaches, Chapter 5 investigated the effects of vascular rinse and chill to improve meat quality of cull dairy cows. Results showed that rinse and chill accelerated the onset of rigor, improved tenderness, with no effects on water losses. Lastly, a final Chapter is provided with some concluding remarks. Overall, this dissertation accomplished the goal to show the importance and potential of cull dairy cows as a beef source, and the value of using farm-management information system data to predict price and carcass quality of cull dairy cows. Nonetheless, further research regarding cull dairy cows is necessary, especially with more involvement of the beef industry. Such research can have a drastic impact not only on dairy farmers culling, marketing decisions, and profit, but also on the packing plant processing the carcass from these animals, as well as on consumer satisfaction and perception of the industry.
