If you want a quick treat, you can eat them straight from their cartons, or toss them with sugar and let them sit for a little while. The sugar concentrates the flavor of berries and draws out their juices. The flavor of the berry cannot be duplicated in any other fruit. When you choose fresh berries for your tasty dishes, choose those that are bright in color. They shouldn't have any green or white patches on them. The best berries feel firm to the touch, but they shouldn't feel too hard. The best blackberries and raspberries are shiny and plump. Berries don't have a very long shelf life. The peak of their texture and flavor lasts just two or three days. You can prolong that time by discarding overripe or moldy berries right away. Place the rest of the unwashed berries in a container you have lined with a couple layers of paper towels. This will absorb moisture, with otherwise hastens the berries' decay. The time to wash your berries in cold water just briefly, is right before you eat them. Luckily for cooks, berries freeze very well. Place them on cookie sheets in one layer and place them in your freezer. Once frozen, you can pop them into plastic bags or containers and leave them in your freezer for up to a year.
