Food research (and funding) is becoming more and more focused on health. While researchers and product developers have made great strides in food engineering, there needs to be increased focus on what happens when the food is actually digested. How is the food absorbed? Do the benefits remain? Digestion is a complex topic, and this will be the first book aimed at food researchers. Authored by a physiologist and a food engineer, the book will be a welcome addition to the literature.

“Infogest” (Improving Health Properties of Food by Sharing our Knowledge on the Digestive Process) is an EU COST action/network in the domain of Food and Agriculture that will last for 4 years from April 4, 2011. Infogest aims at building an open international network of institutes undertaking multidisciplinary basic research on food digestion gathering scientists from different origins (food scientists, gut physiologists, nutritionists...). The network gathers 70 partners from academia, corresponding to a total of 29 countries. The three main scientific goals are: Identify the beneficial food components released in the gut during digestion; Support the effect of beneficial food components on human health; Promote harmonization of currently used digestion models Infogest meetings highlighted the need for a publication that would provide researchers with an insight into the advantages and disadvantages associated with the use of respective in vitro and ex vivo assays to evaluate the effects of foods and food bioactives on health. Such assays are particularly important in situations where a large number of foods/bioactives need to be screened rapidly and in a cost effective manner in order to ultimately identify lead foods/bioactives that can be the subject of in vivo assays. The book is an asset to researchers wishing to study the health benefits of their foods and food bioactives of interest and highlights which in vitro/ex vivo assays are of greatest relevance to their goals, what sort of outputs/data can be generated and, as noted above, highlight the strengths and weaknesses of the various assays. It is also an important resource for undergraduate students in the ‘food and health’ arena.

Nutrition before, during and after training or a sporting event can improve the comfort, energy and performance of athletes of all levels, from elite to recreational, as well as providing long-term health benefits. Nutrition for Sport, Exercise and Performance offers a clear, practical and accessible guide to the fundamentals of sport and exercise nutrition. The expert authors begin by explaining key principles, including understanding energy systems, exercise physiology and metabolism. They cover the basics of digestion, absorption and nutrition; examine the key macronutrients and micronutrients essential for performance; and discuss the process of dietary assessment. Part 2 goes on to explore in detail nutrition for pre- and post-training, hydration, the use of supplements and body composition, and provides guidance on developing plans for both individual athletes and teams. The final component examines specific nutrition issues and special needs, including working with elite athletes, strength-and-power athletes, young, older and disabled athletes, endurance sports, GI disturbances and rehabilitation issues. Cultural issues are also explored, including diets for vegan and vegetarian athletes, and religious perspectives and requirements. Featuring contributions from a range of sport and exercise nutrition professionals and including practical diet plans, diagrams and the latest research and evidence throughout, this is a core reference for undergraduates, nutritionists and trainers.

In this volume, seven of the chapters deal with feeding and diet, which is reasonable since insects consume an estimated l5-20% of all the world's planted crops. Many insects even have a specialized larval feeding stage that usually occupies a different ecological niche to the adult and so does not compete for the adult's food stock. Other chapters describe the means by which insects maintain their water balance, nitrogen balance and temperature balance under a range of conditions. These involve regulation by hormonal and behavioural systems that are also described here. The l4 chapters are all extensively illustrated and referenced and therefore provide excellent summaries of current knowledge. They will be of great value to entomologists, zoologists and biologists in general.

Digestion is the process of taking food and nutrients into the body and making them available for use in all of the body’s processes. The digestive system breaks down food and extracts the important nutrients, eliminating the excess substances that cannot be used. These nutrients provide energy for the body to grow, function, and make repairs to itself. Digestion and Nutrition, Third Edition describes the path that food takes through the system, the organs involved, and how the body uses different types of nutrients, while highlighting the importance of healthy eating and the problems and diseases that can affect the digestive tract. Packed with full-color photographs and illustrations, this absorbing book provides students with sufficient background information through references, websites, and a bibliography.
