In a large soup pot, melt the ghee over medium heat. Stir in the cinnamon, nutmeg, cardamom, fenugreek, dried ginger powder, and fresh chopped ginger and sauté for a minute. 2. Add in the vegetable broth, carrots, and bring to a boil. Turn down the heat to low, simmer for 10 minutes. 3.Using a blender, transfer the soup and blend to make a puree. Now return this soup to the soup pot and cook for another minute. 4. Serve in soup bowls and sprinkle the lemon zest and drizzle the olive oil and add your favorite herbs.
