El ajo pertenece al género Allium que comprende algunas de las plantas cultivadas más antiguamente por el hombre. La historia conocida del ajo se remonta a 5.000 años antes de Cristo; en tiempos de los faraones, los trabajadores de las pirámides de Egipto lo consumían en grandes cantidades porque consideraban que este les daba fuerzas y poder para soportar las fatigas. En la actualidad, el consumo mundial y nacional de ajo ha crecido gracias a la valorización de sus cualidades como condimento, para potenciar y enriquecer el aroma y sabor de alimentos y por sus numerosas propiedades medicinales, la mayoría comprobadas científicamente. La investigación nacional realizada para tratar de resolver los principales problemas de orden técnico en este cultivo, ha sido realmente poca, merced a los escasos recursos económicos destinados a ella. El proyecto en el cual se basa la presente publicación, fue financiado por el Ministerio de Agricultura y Desarrollo Rural y ejecutado por el Centro de Bio-Sistemas de la Universidad de Bogotá Jorge Tadeo Lozano con el concurso de la Corporación PBA. Durante dos años se trabajó, tanto en Centro Experimental y Laboratorio de Tejidos, como a nivel de campo con la participación activa de productores de ajo de Santander, Boyacá y Cundinamarca. Los resultados que se muestran a continuación, constituyen un avance importante en la solución de los problemas técnicos, ya mencionados, del cultivo del ajo. Sin embargo, se hace necesaria la continuidad de este proceso investigativo para un pronto despegue de este importante sector de la economía agrícola nacional.
