El café bogotano tuvo un apogeo entre 1912 y 1948, y posteriormente, un declive con el Bogotazo. Es cierto que aquel día varios fueron pasto de las llamas y desaparecieron para siempre. Pero también es verdad que muchos resurgieron de sus cenizas y acabaron dando paso a la que tal vez sea la etapa de mayor recordación en la tertulia bogotana. El Café Fortaleza es un buen ejemplo: aunque el local donde funcionaba se quemó el 9 de abril de 1948, a los pocos meses reabrió bajo una nueva enseña comercial, El Automático. Y El Automático –como tal vez no necesita decirse– es el café capitalino por excelencia, el café que compendia dentro sí una parte sustancial de lo que fue la vida intelectual en Colombia. Este libro, es fruto del trabajo emprendido por el programa Bogotá en un Café, del Instituto Distrital de Patrimonio Cultural. El programa, ha adelantado esfuerzos en reconocer por un lado, aquellos lugares que sobreviven con gran salud: el Café Pasaje y la cafetería La Romana; la Pastelería Belalcázar que buscó un nuevo refugio sobre la carrera octava; La Florida, que sufrió el saqueo del Bogotazo y que ha logrado consolidarse como uno de los lugares de encuentro más importantes de la ciudad y el San Moritz, ubicado en una vieja casona, que se mantiene como el único café que a principios del siglo XXI conserva la esencia del café bogotano de los años cuarenta. Por otro lado, a través del programa se ha identificado que a partir del año 2000 y después de dos décadas sombrías, más de cincuenta nuevos cafés han abierto sus puertas en el centro de la ciudad. Por supuesto, ya no son cafés literarios. Ahora vemos una amplia gama de cafés con otras características: cafeterías, cafés-librería, cafés-internet o ciber-cafés y pequeños establecimientos cuya apuesta principal se basa en la educación en cultura cafetera, y sobre todo por la utilización de métodos de extracción artesanal, en apariencia novedosos pero en realidad inventados hace décadas o siglos y que ofrecen una alternativa distinta a la máquina espresso. Este libro busca por tanto, y pese a la presencia avasallante de ese lugar común que es el Café en Bogotá, responder preguntas que no se han resuelto como cuándo y por qué razón surgieron; cuál es el nexo que los une con la industria cafetera de Colombia; quiénes fueron sus dueños, dónde estaban ubicados, cuántos eran y, sobre todo, qué pasaba y qué pasa en su interior.
