Excerpt from Electric Household Refrigeration The electric refrigerator proved one of the most desirable pieces of home equipment used on the experimental farms in the New England rural electrification project. Such was the conclusion reached by both the housewife and the farmer. Seven farms cooperated in the electrification project. Six of the seven were equipped with household refrigeration units. The other farm continued to use ice. Three are retail dairy farms; two specialize in poultry; and the other, while caring for 10 head of stock as a side line, is a fruit farm. The six locations range from the southern boundary line of the state to Franklin, and from near the coast to a point midway on the east and west line. No two farms were served by the same electric power company, and rates and service conditions varied accordingly. Four of the machines were installed and serviced by the local dealers who represented the manufacturer. Lacking convenient dealers to look after the equip ment, two machines were installed and serviced by Boston distributors. The sphere of usefulness of refrigeration by mechanical means is constantly expanding, and the number of refrigerating machines manufactured is every year larger than in the preceding one. Doubtless, in the near future, practically every house in suburban and urban districts either will be supplied with artificial ice manufactured in large refrigerating plants or will depend for food preservation on refrigerating equipment which is all but completely self-servicing. Modern refrigeration, which includes practical methods of ice making in a refrigerating plant and of direct cooling without ice, is a comparatively recent development. In the last three quarters of a century, this industry has expanded to such an extent and our dependence on it has become so complete that our present-day system of freight transportation and of ocean commerce in perishable foods could not exist without it. For thousands of years, humans coped with heat by harvesting and storing natural ice and devising natural cooling systems that utilized ventilation and evaporation.
