Oilseeds and legumes provide a significant proportion of the protein and energy requirements of the world population. This important new book provides comprehensive details of the main oil seed and legume crops focusing particularly on the nutritional aspects of these crops which are, or have the potential to be, more widely exploited in developing countries where are or have the potential to be, more widely exploited in developing countries where protein and energy malnutrition continue to escalate. The predicted rapid rise of populations in many world regions which are increasingly vulnerable to food shortages means that a full knowledge of the nutritional significance of available crops is vital in helping to prevent potential calamities. Food and Feed from Legumes and Oil Seeds has been written by a team of international contributors, each with direct experience of these important crops and their nutritional merits, and the editors are both international experts in the crops covered. This book will become of great value to nutritionists, food and feed scientists and technologists, agricultural scientists and all those involved with overseas developments and food aid organizations.

"This series of meetings bring together experts working in this field of Science from throughout the world. A major feature of each conference session is an invited review, which outlines the advances that have been made in a particular area since the last meeting. A major factor that was considered at this meeting was the likely impact of plant genetic modification on the nutritional quality of their seeds for human and animal feeding. As an example already a number of legume species and rapeseed have been modified to improve the sulphur amino acid content of their seed and thus their protein quality. Besides the major grain legume species and rapeseed that had been discussed at previous meetings in this series number of crop products, as potential protein sources, for animal feeding, were considered for the first time. These included cottonseed meal, linseed meal, and sunflower seed meal. The potential of some new exotic crops from Mexico was also covered including Mexican species of the genus Lupinus and a Mexican plant from the same family as castor bean, which has a very high oil content but is usually toxic. Work from Cuba compared the nutritional characteristics of soybean with a range of tropical grain legume species, which have received little previous attention. A major change at this meeting was the greater consideration of the effects, both positive, and negative, of the consumption of these seeds for human nutrition. A major review on the development of allergnicity to legume seed in humans is included. There was also consideration of the potential role of antinutritional factors in reducing the growth of various types of tumour cells. The presented papers also suggest that the consumption of legume seed in the diet can potentially reduce serum cholesterol levels. Overall from the 5 conference sessions there are 52 papers. Of these 7 are major invited reviews on the current state of research in this important area for human and animal feeding."

Oilseeds offer a plethora of opportunities for the food and feed industry, thanks to their high oil and protein content . Their phytonutrients and functional components have attracted the interest of researchers, leading to the development of functional foods. This book gathers the latest scientific information on the nutrients, phytonutrients and health benefits as well as the adverse effects of consuming various conventional and non-conventional oilseeds. In addition, each chapter includes a section comprehensively explaining the use of oilseeds in functional bakery, dairy, and other food products. Given its scope, the book is a valuable resource for students, researchers, nutritionists, food scientists and technologists, and for anyone involved in product development based on oilseed and its components.

Nuts, oilseeds and legumes are important dietary constituents to combat chronic diseases of lifestyle due to the presence of important dietary macro- and micronutrients. However, many potential hazards associated with the harvesting, storage and processing occur of which mycotoxin contamination appears to be one of the major causes for economic losses of foodstuff and health-related risks resulting in many animal and human diseases. The major toxigenic fungal genera are Aspergillus, Penicillium and Fusarium, producing a diverse group of mycotoxins with adverse toxicological effects of which the aflatoxins, ochratoxin A, deoxynivalenol, zearalenone and the fumonisins are some of the most common and well-researched mycotoxins. The levels of these mycotoxins, among others, are well controlled in food and feed in developed countries, whereas their regulation in developing countries is poor or lacking. Mycotoxin control in food commodities involves a range of interventions to secure safe food based on a farm to fork approach, including good agricultural, storage and processing practices, which form part of the Hazard Analysis Critical Control Points (HACCP) system. For example, pistachio nuts are associated with a high risk for pre-harvest aflatoxin contamination due to insect damage and “early splitting” of the fruit hulls, as well as during the extensive post-harvest processing of the nuts. The generic example of an HACCP plan for pistachio processing identifies five Critical Control Points (CCPs) which need careful monitoring to ensure a consumer product which adheres to international aflatoxin regulations. These CCPs include steps related to the use of flotation tanks, adequate removal of hull debris from the nut shells, proper drying and sorting prior to packaging or export. Key to this HACCP plan is good communication between pistachio producer and processor. These and other control parameters to reduce mycotoxin contamination are critically reviewed in the current chapter which will be important in food safety management regarding the control of mycotoxin exposure.

This publication contains the proceedings of a seminar on 'Production and Utilization of Protein in Oilsead Crops', held at Braunschweig from 8 to 10 July, 1980. The meeting was held under the auspices of the Commission of the European Communities, as part of the EEC Common Research Programme on Plant Protein Improvement. Methods for the intensive production of meat and milk have been adopted to an increasing extent in EEC coun±ries over the past two decades, their success is based on animal diets of high quality, balanced for energy and protein contents. The substantial improvements in cereal yields in EEC over this period has kept pace with the increasing demand for dietary energy in concentrated animal foodstuffs, but provision of the necessary protein supplementation has required ever-increasing imports of soybean products. Grain legumes and oilseed meals are the two main sources of concentrated protein for the animal feeds industry, and there is an urgent need for increased EEC production of both. Seminars on grain legumes have been held at regular intervals since 1976; the meeting at Braunschweig, now reported, was the first to consider in detail the potential contribution from oilseed crops suitable for EEC conditions. Local arrangements for the seminar were made by Professor Dr. M. Dambroth, Dr. C. Sommer, and their colleagues at the Institut fUr Pflanzenbau und Pflanzenzuchtung, Braunschweig - Volkenr6de.
