Food credence attributes are food features that are difficult to verify even after consumption. Consumers, today, are concerned about many food credence attributes, including animal rights, contamination risk, fair trade practice, genetic modification, geographical origin, and organic farming. For the past several decades, many scholars have analyzed the value consumers place on credence attributes and have reported that consumers will pay a premium for foods with these desirable properties. In addition, their studies reveal that individual consumers place greater importance on some credence attributes than others. For example, some are seriously concerned about animal welfare, while others are solely concerned about food safety. One of the objectives of this book is to summarize recent empirical findings from scholarly works on how consumers value food credence attributes. Such knowledge would benefit producers, processors, retailers, and policy makers. Another objective of this book is to discuss the effectiveness of the programs that have been introduced to strengthen the relationship between producers and consumers. Many programs have been developed to more effectively inform consumers regarding food production processes.

Abstract: Myriad aspects of food labeling are discussed. There is widespread agreement that all foods should bear ingredient labeling. It is further recommended that such labeling be precise and comprehensible to the average consumer. Many commenters suggest that nutrition information be included in labels. The open dating of foods also found some support among the commenters. It is suggested that imitation and substitute foods be identified. Some of the commenters also expressed either unqualified or conditional support for food fortification. It is suggested that solid or liquid weight be mentioned on the label. Some commenters advocate less flexibility in FDA's safe and suitable ingredients policy.

Growing evidence shows that a dietary pattern inspired by Mediterranean diet principles is associated with numerous health benefits. A Mediterranean-type diet has been demonstrated to exert a preventive effect toward cardiovascular diseases, in both Mediterranean and non-Mediterranean populations. Part of these properties may depend on a positive action toward healthier metabolism, decreasing the risk of diabetes and metabolic-syndrome-related conditions. Some studies also suggested a potential role in preventing certain cancers. Finally, newer research has showed that a higher adherence to the Mediterranean diet is associated with a lower risk of cognitive decline, depression, and other mental disorders. Overall, a better understanding of the key elements of this dietary pattern, the underlying mechanisms, and targets, are needed to corroborate current evidence and provide insights on new and potential outcomes.This Special Issue welcomes original research and reviews of literature concerning the Mediterranean diet and various health outcomes:Observational studies on established nutritional cohorts (preferred), case-control studies, or population sample on the association with non-communicable diseases;Level of evidence on the association with human health, including systematic reviews and metaanalyses; Evaluation of application of Mediterranean diet principles in non- Mediterranean countries;Description of mechanisms of action, pathways, and targets at the molecular level, including interaction with gut microbiota.

Master's Thesis from the year 2013 in the subject Business economics - Offline Marketing and Online Marketing, grade: DE: 1; DK: 12, Aarhus School of Business, language: English, abstract: OBJECTIVE: In times when consumers' health and healthy eating has become a central priority in the European Commissions' mission to protect the interests of consumers the European legislation has put a big emphasis on the regulations concerning functional foods in the European market by adopting a list of authorised health claims which have been scientifically proven. There is an increasing number of studies dealing with consumers' perception of health claims and their understanding all of which have considered different factors influencing consumers' responses. However none of these studies has considered the possible impact of the food label's context factors such as brand, colour, image or the 'bio' sign. The aim of the present study is to determine whether such factors in combination with other possible influential sources of information which are not part of the food label like mass media influence the level of understanding of health claims and the way consumers perceive them. RESEARCH DESIGN AND METHODS: 480 respondents from Germany participated in the study. Margarine spread bearing a health claim of a less popular functional ingredient was presented to the participants who were divided into 16 groups (N=30 per group) and each group was presented with a different version of the product based on the variations in the levels of the chosen food label's context factor stimuli. Consumers‟ attitudes towards the health claim were measured as well as the level of their understanding of the claim. A repeated measures factor was also used by giving the respondents to read a newspaper article explaining the benefits of the functional ingredient after which their attitude and understanding were re-evaluated. RESULTS: The newspaper article proved to be substantially determining factor both with respect to positively influencing consumers' attitudes and as a risk factor in their understanding of the claim. The presence of 'bio' sign on the product's label together with a darker colour were also found to have a significant positive influence on consumers' perceived credibility of the health claim. The results also showed that when the bio product was from a famous brand it increased the risk of misunderstanding of the health claim. Additionally, the usage of bright colour and famous brand together as well as bright colour and image in combination were also shown to represent a factor which decreased the probability of misunderstanding.
