Microbiology is the study of micro-organisms that is the organisms which are of microscopic dimensions. These organisms are too small to be clearly perceived by the unaided human eye. As a direct consequence of the invisibility of microbes to the naked eye and the need for special techniques to study them, microbiology was the last of the three major divisions in biology (the other two are botany and zoology) to develop. Though it was late to arrive, this is a discipline which has been quick to develop. Nutrition is a science that examines the relationship between diet and health. Dieticians are health professionals who specialise in this area of study, and are trained to provide safe, evidence-based dietary advice and interventions. Many common diseases and their symptoms can often be prevented or alleviated with better nutrition. The science of nutrition attempts to understand how and why specific dietary aspects influence health. Both Microbiology and Nutrition are interlinked. This book is a reference work for students and researchers. As microbes plays very important role in our day-to-day life, the book discusses microbiology, classification of microbes, how they affect on various food products which are generally consumed. The role of nutrition in health and fundamental principles of nutrition are explained with a view to their application to individuals in all age groups and health conditions.

Food Microbiology is the study of action of microbes on food. The book discusses in a narrative style, the interaction between microbes, food and the environment besides tracing the beneficial and harmful effects of microbial growth in food. The contents of the book have been sequentialy divided into 5 units giving a detailed account of the various aspects of food as an ecosystem, preservation techniques? both traditional and advanced, importance of microbial degradation and fermentation of food along with the prevalent food-borne diseases. The laboratory diagnosis of the food-borne pathogens and their isolation, identification and characterization would be useful for students, researchers and teachers.

The book demonstrates that food safety is a multidisciplinary scientific discipline that is specifically designed to prevent foodborne illness to consumers. It is generally assumed to be an axiom by both nonprofessionals and professionals alike, that the most developed countries, through their intricate and complex standards, formal trainings and inspections, are always capable of providing much safer food items and beverages to consumers as opposed to the lesser developed countries and regions of the world. Clearly, the available data regarding the morbidity and the mortality in different areas of the world confirms that in developing countries, the prevalence and the incidence of presumptive foodborne illness is much greater. However, other factors need to be taken into consideration in this overall picture: First of all, one of the key issues in developing countries appears to be the availability of safe drinking water, a key element in any food safety strategy. Second, the availability of healthcare facilities, care providers, and medicines in different parts of the world makes the consequences of foodborne illness much more important and life threatening in lesser developed countries than in most developed countries. It would be therefore ethnocentric and rather simplistic to state that the margin of improvement in food safety is only directly proportional to the level of development of the society or to the level of complexity of any given national or international standard. Besides standards and regulations, humans as a whole have evolved and adapted different strategies to provide and to ensure food and water safety according to their cultural and historical backgrounds. Our goal is to discuss and to compare these strategies in a cross-cultural and technical approach, according to the realities of different socio-economic, ethnical and social heritages.

This book discusses the use of microorganisms for improving nutrient quality and producing healthier foods. Conventional roles of microbes in food preservation and in producing more readily digestible nutrients via natural fermentation processes are also examined. Individual chapters explore topics such as bio-preservation, incorporation of lactic acid bacteria, traditional fermented Mongolian foods, fermented fish products of Sudan, probiotics in China, fermented soymilk, food colorants, and the effect of food on gut microbiota. Readers will gain insights into current trends and future prospects of functional foods and nutraceuticals.
