This book explores the origins of agriculture in China. It includes archaeological data from the terminal Pleistocene to the early Holocene found in the Yellow and Yangzi River valleys, botanical data on wild millet and wild rice, data on palaeoclimates and palaeoenvironments, and comparative ethnographic data. Lithic evidence indicates cultural continuity through this period, and archaeological discoveries illustrate that wild cereal exploitation was practised prior to the emergence of agriculture. As the dry and cold palaeoclimate forced prehistoric people to search for new sources of food, intensive cereal exploitation might have resulted in a sedentary way of life. Increasing population size triggered attempts to increase the productivity of food. It is also argued that the invention of pottery was prompted by the need to boil cereal grains. As cereals became staple foods, demands for increased production triggered cereal cultivation and domestication.

Tel Abu Hureyra, a settlement by the Euphrates River in Syria, was excavated in 1972-73 by an international team of archaeologists that included the authors of the book and scientists from English, American, and Australian universities. The excavation uncovered two successive villages: in the first village (c. 11,500-10,000 BP), inhabitants foraged vegetation and hunted local wildlife, the Persian gazelle, in particular. In the second village (c. 9700-7000 BP), inhabitants employed a more sophisticated method of food production, the cultivation of grain crops and the pasturing of sheep, goats, cattle, and pigs. Documented first hand in this book, these findings capture the transition in human history from the hunting-and-gathering to the farming way of life.

Ten thousand years ago there were few if any communities whom we can properly call farmers; five thousand years later, large numbers of the world's population were farmers, using a wide variety of crops and animals in different combinations in different regions. The possible reasons for the transition have long been one of the most controversial topics in archaeology, and continue to be so. The author integrates a massive array of information from archaeology (including archaeological approaches right across the humanities and science spectrum), together with many other disciplines including anthropology, botany, climatology, genetics, linguistics, and zoology.
