It would be difficult to imagine a more appropriate means of marking the Jubilee of the Dairy Research Laboratory, Division of Food Processing, CSIRO, than a publication on whey and lactose processing. The genesis of the Laboratory in 1939 was when the Australian dairy industry was very largely based on the supply of cream from farms to numerous butter factories, the skim milk being fed to pigs. By the mid-1940s, when Geof frey Loftus-Hills was appointed in charge ofthe fledgling Dairy Research Section, the main objective of the Section-the full utilization of the con stituents of milk for human food-had been firmly established. Over the next two decades progress towards this objective was exemplified by the scientific and technological contributions made in specialized milk powders for use in recombining and in the manufacture of casein and cheese. Meanwhile farming practices changed from cream production to the supply of refrigerated whole milk to the factories. By the late 1960s the increasing production of cheese and casein had re sulted in almost 2 million tonnes of whey per annum. This represented not only a waste disposal problem, but also under-utilization of over 100000 t of milk solids. The Laboratory had now grown to a staff of around 70, so it was possible to allocate some resources to this extra challenge.

This book examines the effects of the interactions between membrane and proteins on the separation of whey proteins. These interactions can be modulated by modifying the chemical environment of the feed solution, for example, by changing the pH. In the experimental set-up, a tubular ceramic cross-flow ultrafiltration membrane was installed and continuous diafiltration was selected as operational mode. pH was found to be a crucial process variable since a wide variety of responses were obtained in permeate flow and protein transmission when this input was altered. As a conclusion, these results provide useful information for the design of filtration strategies in which particular whey fractions are targeted.

This book is a collection of papers derived from a conference on membranes held at the Columbus Laboratories of Battelle Memorial Institute in Columbus, Ohio, on October 20 and 21,1969. When a decision is made to sponsor a membrane conference, the problem immediately arises as to what aspect of the technology needs to be emphasized. There were several alternatives from which to choose. The Office of Saline Water, for example, has been sup porting for many years a tremendous volume of research on the desalination of sea and brackish water. In fact, were it not for this effort, the conference which resulted in this book could probably not have been held. Regardless, one could not easily choose to hold a conference on water desalting because the subject is adequately covered in the literature, and yearly conferences are sponsored by the funding agency. Other government agencies, specifically The National Heart and Lung Institutes and The National Institute of Arthritis and Metabolic Diseases, have supported a sizable number of research programs involving the use of membranes for biomedical devices useful in blood oxygenation and kidney augmentation or replacement. Again, these groups have their own outlets for disseminating research results. Still other choices existed among such areas as permeation processes for petroleum separations, advanced or novel membrane process concepts, or characterization of membranes - morphology, permeation prop erties, etc. , - or biological membranes. None of these areas seemed to provide just the right technological emphasis.
