Food-borne disease remains a major public health challenge in Africa and Asia. Most of the foods that carry the highest pathogen risk are produced by smallholder farmers, marketed through the informal sector, and sold in wet markets. Given the significant role of informal markets in African and Asian food systems, attention is invested in understanding (1) how the people that participate in informal markets are exposed to risk, and (2) how they manage risk. We conduct a participatory risk analysis with a gender lens in 20 livestock and fish value chains to study whether gender-based differences influence risk of food-borne disease. We find that socially constructed gender roles are more important determinants of health risk than biological differences between men and women. Variations in risk exposure between men and women are mainly due to gender-based differences in occupational exposure, and secondarily to differences in consumption patterns. Women are important but under-recognized risk managers in the realms of food production, processing, selling, preparation, and consumption. Understanding the influence of gender on risk exposure and management is essential for improving food safety in informal markets.

"In rural societies, where local culture and traditions are still very vibrant, responsibilities and tasks are often assigned to women and men on the basis of traditional gender roles, defined as those behaviours and responsibilities that a society considers appropriate for men, women, boys and girls. These roles change over time, have different characteristics in every local context and are shaped by ideological, religious, cultural, ethnic and economic factors. They are a key determinant of the distribution of resources and responsibilities between men and women (FAO, 2010b). In many cases gender roles are biased and favour certain social constituencies at the expense of others. Rural women, for instance, face serious obstacles more regularly than men, since traditional structures and perceptions tend to prevent them from obtaining the necessary tools to reach their full potential in the agricultural sector. In fact, despite their major involvement in and contribution to livestock management, women tend to have limited access to resources, extension services and less participation in decision making compared to their male counterparts (FAO, 2011a). Recognizing the different roles that women and men play in the agriculture sector is key to identifying the diverse challenges they face and tailoring projects and programmes on their specific needs. Enhancing women’s participation in agricultural production, including livestock production, has the potential to generate a range of benefits for rural households in the developing world. These benefits include enhanced economic welfare, investment in children’s health and nutrition, and empowerment for women. However, attitudes and norms may shape the ability of women to engage in a broader range of productive activities if those activities are not viewed as traditionally female domains. The attitudes of women themselves and their husbands may be particularly salient: if women do not view livestock production as an appropriate activity to pursue based on their perception of community norms, they may not be responsive to economic incentives designed to encourage their involvement. Similarly, if husbands do not view ownership and control over assets or the sale of agriculture as appropriate roles for their wives, it may be very challenging for women to maintain or increase their role in household agricultural production.

All agricultural production—whether of crops, trees, forages, livestock, or fish—starts with seeds,* mak-ing seed security vital to food security. Seed secu-rity means that producers—smallholder farmers es-pecially—have permanent and unrestricted access to adequate quantities of quality seed that is suita-ble to their agroecological conditions and socio-economic needs. Efforts to enhance seed security should be inclusive, without disparities related to in-come, social class, age, or gender. Yet, gender gaps reveal themselves across the seed system, in-cluding in the breeding, production, selection, and distribution stages, as well as in how the seeds are used and who reaps the benefits from this use.
