Excerpt from Handling Apples From Tree to Table The blush, or red color, of an apple is not a reliable index of maturity. The ground color (underlying green or yellow), however, can be used as an index. The quality of a'red apple can be judged ordinarily by the proportion of red to green; the 'more red, the better the eating quality. As most varieties of apples become mature the ground color changes from a green very much like that of the leaves to a lighter shade and eventually to yellowish. The time to pick most varieties is when the first'signs of yellowing appear This is not always true with some varieties - Grimes Golden, J onathan, and Yellow Newtown, for example - when grown under certain conditions. The red sp orts of some varieties usually become fully red before they are mature, with no underlying ground color left for observation. As a result, they have frequently been picked too soon and have suffered in popular esteem because they were judged to have poorer quality than the parent variety. Although ground color cannot be used as an index of maturity for red bud sports, the ground color of the parent varieties growing in the same Vicinity can be so used, as their seasons of maturity are ordinarily about the same. Excerpt from Picking Maturity of Apples Many factors determine the best' time to harvest an apple cr0p. Each variety presents an individual problem. The importance of the factors involved in establishing indexes of maturity will depend on the variety but may vary within a variety, with different cultural and climatic conditions. In the case of all varieties, however, the fruit increases in size as long as it remains attached to the tree. From this standpoint it is desirable to leave the fruit on the tree as long as dropping does not equal or exceed the volume increase. However, picking should be completed by the time the loss due to dropping equals the gain due to volume increase. Since the time when dropping is likely to become excessive cannot be predicted, picking should start while the fruit is still adhering well. The period of the collection of the data which from the subject-matter of this publication is coincident with the life of the Station, having been begun over twenty years ago by the late Professor Emmet S. Goff, who was the Station's first horticulturist. In 1891 this work passed into the hands of Professor Spencer A. Beach, who is now, fortunately, charged with the presentation to the public of the results of this long-continued and costly effort. In the collection and organization of the information contained in this volume, Professor Beach has had the valued assistance of Professors Wendell Paddock, Charles P. Close, Heinrich Hasselbring and Vinton A. Clark, who have been associated with him in the horticultural department of the Station. Professor Nathaniel O Booth and Mr. Orrin M. Taylor have not only assisted in the collection of original data, but they have rendered efficient service in the immediate preparation of the text. The publication of this volume, which is confined to the writer varieties of apples, to be followed by a second volume covering the early and fall varieties, is made possible by the generous action of the New York legislature of 1904, and should be regarded as an occasion of justifiable pride on the part of the state, the Station management and the individuals chiefly concerned in the work on its professional side.
