2003 James Beard Award NomineeThe open hearth is where American colonials baked their beans, English families took their tea, French country families prepared their pot au feu, and Italian mothers stirred their polenta. THE MAGIC OF FIRE explores both the techniques of hearth cooking and the poetry of hearth and flame through the ages. The recipe collection offers a fascinating glimpse into the past with authentic renditions of Brisket Baked under Ashes, Pot Roast, String-Roasted Turkey, Stockfish Stew, Chocolat Ancienne, and Tarte Tatin. With its evocative and erudite narrative and extraordinary paintings by master realist Ian Everard, THE MAGIC OF FIRE is the definitive work on open-hearth cooking. • The first book to cover the complete range of open-hearth cooking techniques, including ash baking, ember roasting, hearthside grilling, string- and spit-roasting, and hearthside Dutch oven baking.• Features 100 extraordinary illustrations of food and fire by master realist Ian Everard.• Many of the recipes require no special equipment. Simply open the book, light a fire, and cook.Reviews"Definitive book on cooking." —Paula Wolfert, author of Mediterranean Grains and Greens, The Cooking of Southwest France"THE MAGIC OF FIRE is the most thoughtful and thorough study of hearth cooking I know of. His book is full of practical information (the section All about the Fireplace is a masterpiece), unconventional recipes, and fascinating historical references that link his modern perspective to this primitive art. It will inspire professionals as well as serious home cooks to recover the taste that only hearth cooking can deliver. " —Paul Bertolli, chef and owner, Oliveto Cafe & Restaurant, author of Chez Panisse Cooking"There is something fundamental about cooking over an open fire. I love the flames, I love the smells, and of course, I love the taste. William Rubel's THE MAGIC OF FIRE, is an indispensable guide to this lost art." —Alice Waters, chef and owner, Chez Panisse"THE MAGIC OF FIRE is a fabulous book! It's about flames and ashes; tripods and spider pots; campfires, hearths, and fireplaces. It's about ember-roasted vegetables, flat breads, stews, steamed puddings, salt cod—deeply fundamental foods that will make you see the possibilities of your fireplace in a new light. Passion, experience, and good writing have met in a book that's good reading, with instructions that are clear as a bell." —Deborah Madison"It's a fun read, particularly for those who have always been fascinated by early American history." —The Baltimore Sun "The bible of hearth cooking." —House & Garden "[An] enchanting, step-by-step, illustrated field guide." —The Philadelphia Inquirer "A seemingly romantic concept that the author insists is quite practical." —Sarasota Herald Tribune "If you're looking for something totally different, I'd dare say you probably won't find another book like this one." —National Barbecue News The best instruction of skillful cooking on the hearth now in print.” —The Journal of Antiques and Collectibles"

Hearth written by Annick Smith and has been published by Milkweed Editions this book supported file pdf, txt, epub, kindle and other format this book has been release on 2018-10-09 with Literary Collections categories.

A multicultural anthology, edited by Susan O’Connor and Annick Smith, about the enduring importance and shifting associations of the hearth in our world. A hearth is many things: a place for solitude; a source of identity; something we make and share with others; a history of ourselves and our homes. It is the fixed center we return to. It is just as intrinsically portable. It is, in short, the perfect metaphor for what we seek in these complex and contradictory times—set in flux by climate change, mass immigration, the refugee crisis, and the dislocating effects of technology. Featuring original contributions from some of our most cherished voices—including Terry Tempest Williams, Bill McKibben, Pico Iyer, Natasha Trethewey, Luis Alberto Urrea, and Chigozie Obioma—Hearth suggests that empathy and storytelling hold the power to unite us when we have wandered alone for too long. This is an essential anthology that challenges us to redefine home and hearth: as a place to welcome strangers, to be generous, to care for the world beyond one’s own experience.

Due to changing climates and demographics, questions of policy in the circumpolar north have focused attention on the very structures that people call home. Dwellings lie at the heart of many forms of negotiation. Based on years of in-depth research, this book presents and analyzes how the people of the circumpolar regions conceive, build, memorialize, and live in their dwellings. This book seeks to set a new standard for interdisciplinary work within the humanities and social sciences and includes anthropological work on vernacular architecture, environmental anthropology, household archaeology and demographics.

Electronic Hearth written by Cecelia Tichi and has been published by Oxford University Press this book supported file pdf, txt, epub, kindle and other format this book has been release on 1992-10-29 with Performing Arts categories.

We all talk about the "tube" or "box," as if television were simply another appliance like the refrigerator or toaster oven. But Cecilia Tichi argues that TV is actually an environment--a pervasive screen-world that saturates almost every aspect of modern life. In Electronic Hearth, she looks at how that environment evolved, and how it, in turn, has shaped the American experience. Tichi explores almost fifty years of writing about television--in novels, cartoons, journalism, advertising, and critical books and articles--to define the role of television in the American consciousness. She examines early TV advertising to show how the industry tried to position the new device as not just a gadget but a prestigious new piece of furniture, a highly prized addition to the home. The television set, she writes, has emerged as a new electronic hearth--the center of family activity. John Updike described this "primitive appeal of the hearth" in Roger's Version: "Television is--its irresistible charm--a fire. Entering an empty room, we turn it on, and a talking face flares into being." Sitting in front of the TV, Americans exist in a safety zone, free from the hostility and violence of the outside world. She also discusses long-standing suspicions of TV viewing: its often solitary, almost autoerotic character, its supposed numbing of the minds and imagination of children, and assertions that watching television drugs the minds of Americans. Television has been seen as treacherous territory for public figures, from generals to presidents, where satire and broadcast journalism often deflate their authority. And the print culture of journalism and book publishing has waged a decades-long war of survival against it--only to see new TV generations embrace both the box and the book as a part of their cultural world. In today's culture, she writes, we have become "teleconscious"--seeing, for example, real life being certified through television ("as seen on TV"), and television constantly ratified through its universal presence in art, movies, music, comic strips, fabric prints, and even references to TV on TV. Ranging far beyond the bounds of the broadcast industry, Tichi provides a history of contemporary American culture, a culture defined by the television environment. Intensively researched and insightfully written, The Electronic Hearth offers a new understanding of a critical, but much-maligned, aspect of modern life.
