Heat And Mass Transfer In Turbulent Moist Air Drying Processes written by Carl-Gustav Berg and has been published by this book supported file pdf, txt, epub, kindle and other format this book has been release on 1999 with Drying categories.

The drying of solids is one of the oldest and most common unit operations found in diverse processes. Nevertheless, it is still one of the sciences that needs basic research, partially because of the difficultics and deficiencies in mathematical process descriptions and partially because of the lack of detailed knowledge of the coupled momentum, heat and mass transfer phenomena. The main objective of this thesis was to perform an in-depth experimental study of the coupled momentum, heat and mass transfer phenomena and to deduce a governing equation for net mass transfer in moist air and turbulent flow (hat was based on the findings. Development of simple and reliable steady state models for turbulent moist air-drying can be considered to be quite well reviewed in literature. Nevertheless, the literature study in the vast field of mass transfer has convinced the author that there is theoretical inconsistency even in the most rigorous mass transfer studies. The missing circumstantial information in the classical drying models is not well described in relation to net mass transfer. Therefore, this thesis presents different physical models that are used in moist air to define the governing net mass-transfer equation for turbulent drying processes. The known and trusted models are combined with coupled momentum, heat and mass transfer equations creating a reliable governing mass transfer equation in turbulent moist air drying processes during net mass transfer, i.e. the advanced drying model (ADM). The advanced drying model is analysed and experimentally verified with the specially designed apparatus described in this thesis. The deduced mass transfer equation indicates that Stefan's diffusion equation should be avoided when calculating drying intensities in turbulent flow with large water vapour partial pressure differences. Most conventional dryers use random heating to dry diverse materials without considering their thermal sensitivity and energy requirements for drying. Eventually, excess energy consumption is necessary to attain a low-quality dried product. Proper heat and mass transfer modelling prior to designing a drying system for selected food materials can overcome these problems. Heat and Mass Transfer Modelling During Drying: Empirical to Multiscale Approaches extensively discusses the issue of predicting energy consumption in terms of heat and mass transfer simulation. A comprehensive mathematical model can help provide proper insight into the underlying transport phenomena within the materials during drying. However, drying of porous materials such as food is one of the most complex problems in the engineering field that is also multiscale in nature. From the modelling perspective, heat and mass transfer phenomena can be predicted using empirical to multiscale modelling. However, multiscale simulation methods can provide a comprehensive understanding of the physics of drying food materials. KEY FEATURES Includes a detailed discussion on material properties that are relevant for drying phenomena Presents an in-depth discussion on the underlying physics of drying using conceptual visual content Provides appropriate formulation of mathematical modelling from empirical to multiscale approaches Offers numerical solution approaches to mathematical models Presents possible challenges of different modelling strategies and potential solutions The objective of this book is to discuss the implementation of different modelling techniques ranging from empirical to multiscale in order to understand heat and mass transfer phenomena that take place during drying of porous materials including foods, pharmaceutical products, paper, leather materials, and more.

Drying Principles and Practice presents the fundamental principles that underlie drying arts as a basis for explaining the behavior of a drying plant. This book begins with an introductory chapter, followed by an account of the phenomena that causes the influence of moisture on its host material and manner in which moisture may be expelled by heat into the humid surroundings. The quantitative description of the way a moist material dries and how it dries under commercial conditions are also provided. The remainder of this text is devoted to surveying less-common methods of drying, moisture-measurement techniques, dryer-control systems, and aspects of the choice and design of industrial dryers. This publication is valuable to engineers, but is also a good source for senior undergraduate and postgraduate students engaged in studies of heat with mass transfer.

Computational methods have risen as a powerful technique for exploring the system phenomena and solving real-life problems. Currently, there are two principle computational approaches for system analysis: continuous and discrete. In the continuous approach, the governing equations can be obtained by applying the fundamental laws, such as conservation of mass, momentum, and energy over an infinitesimal control volume. On the other hand, the discrete approach concentrates on mimicking the molecular movement within the system. Both approaches have pros and cons, and continuous development and improvement in the existing computational methods are ongoing. Advanced Computational Techniques for Heat and Mass Transfer in Food Processing provides, in a single source, information on the use of methods based on numerical and computational analysis as applied in food science and technology. It explores the use of various numerical/computational techniques for the simulation of fluid flow and heat and mass transfer within food products. Key Features: Explores various numerical techniques used for modeling and validation Describes the knowhow of numerical and computational techniques for food process operations Covers a detailed numerical or computational approach of the principles of heat and mass transfer in the food processing operation Discusses the detailed computational simulation procedure of the food operation Recent years have witnessed a rapid development in the field of computational techniques owing to its abundant benefit to the food processing industry. The relevance of advanced computational methods has helped in understanding the fundamental physics of thermal and hydrodynamic behavior that can provide benefits to the food processing industry in numerous applications. As a single information source for those interested in the use of methods based on numerical and computational analysis as applied in food science and technology, this book will ably serve any food academician or researcher in learning the advanced numerical techniques exploring fluid flow, crystallization, and other food processing operations.
