Résumé : L'alimentation est un élément essentiel de la performance sportive. Les recommandations de suivi de l'adolescent sportif de haut niveau émanent de la Société Française de Nutrition du sport insistent sur la prise en charge nutritionnelle de ces jeunes athlètes hors du cocon familial. On assiste à des déséquilibres de l'alimentation malgré l'existence de circulaires ministérielles visant à améliorer l'alimentation en restauration scolaire et les notions de nutrition qui leur sont enseignées durant leur cursus scolaire et sportif. Nous avons étudié durant huit mois un groupe de huit sujets durant une phase d'observation et une phase d'éducation nutritionnelle individualisée. Concernant l'équilibre alimentaire, une majorité des sujets consomment plus de fruits et de légumes, plus de protéines (viande, oeuf, poisson) après l'intervention. Ils ont changé en majorité leurs mauvaises habitudes alimentaires en diminuant les « fastfood » et les boissons sucrées. Un score de conscience alimentaire a été créé afin d'intégrer la correction de l'équilibre alimentaire, le changement des mauvaises habitudes et les connaissances en matière de nutrition. Ce score est amélioré durant notre intervention. Mis en corrélation avec la performance sportive à l'entrainement et en compétition, il montre un impact positif sur la performance à l'entrainement mais un résultat mitigé en compétition, selon le profil des sujets (degré d'implication, autres objectifs personnels). Ce travail, préparatoire à un travail à plus grande échelle et non significatif sur le plan statistique, permet de suggérer que l'éducation nutritionnelle individualisée, suivie et régulière, permet d'optimiser les conditions nécessaires à l'amélioration de la performance sportive, en ciblant le profil des sujets concernés au préalable.

Les objectifs de ce travail étaient triples : le premier était de réaliser une expérience d'éducation en nutrition qui mette en oeuvre des moyens et des outils originaux adaptés au public ciblé (les adolescents scolarisés), le deuxième objectif était d'adapter des techniques d'évaluation afin de pouvoir conclure sur l'efficacité ou la non-efficacité de notre expérience, le troisième objectif était d'entamer une collaboration efficace entre un institut de recherches et l'éducation nationale. L'éducation nutritionnelle personnalisée, dispensée à des classes de 1ère et de 3ème, semble avoir un effet positif sur l'acquisition des connaissances dans le domaine de la nutrition. Cet effet n'est pas enregistré au niveau des classes de 6ème, du fait du manque de performance de notre questionnaire d'une part, du faible effectif de la classe d'autre part, et enfin de l'intérêt secondaire porté, à ce niveau, à cet aspect de l'expérience. Les effets de cette éducation nutritionnelle sur la consommation alimentaire, appréciée par des enquêtes de type (rappel des 24 heures), sont plus nuancés. Seul le rapport acides gras polyinsaturés / acides gras saturés (P/S) semble évoluer pourla classe de 1ère, de façon positive en regard des objectifs fixés au départ de l'action éducative. Ces résultats ne reflètent pas les données subjectives et prometteuses de changements de comportement, suggérés par simple interrogation des sujets en fin d'expérience. Cependant, l'évolution, sur l'une des classes expérimentales, d'un des paramètres vers l'objectif qui lui était assigné, encourage la réalisation d'expériences d'éducation en nutrition

Defending ethics in sport is vital in order to combat the problems of corruption, violence, drugs, extremism and other forms of discrimination it is currently facing. Sport reflects nothing more and nothing less than the societies in which it takes place. However, if sport is to continue to bring benefits for individuals and societies, it cannot afford to neglect its ethical values or ignore these scourges. The major role of the Council of Europe and the Enlarged Partial Agreement on Sport (EPAS) in addressing the new challenges to sports ethics was confirmed by the 11th Council of Europe Conference of Ministers responsible for Sport, held in Athens on 11 and 12 December 2008. A political impetus was given on 16 June 2010 by the Committee of Ministers, with the adoption of an updated version of the Code of Sports Ethics (Recommendation CM/Rec(2010)9), emphasising the requisite co-ordination between governments and sports organisations. The EPAS prepared the ministerial conference and stepped up its work in an international conference organised with the University of Rennes, which was attended by political leaders, athletes, researchers and officials from the voluntary sector. The key experiences described in the conference and the thoughts that it prompted are described in this publication. All the writers share the concern that the end result should be practical action - particularly in terms of the setting of standards - that falls within the remit of the EPAS and promotes the Council of Europe's core values.
