Vegetables are a main part of Indian cuisine since they are comparatively easy and economical to grow and cook, and many Indians are vegetarian as a result of economic, cultural and religious reasons.In Hindi, vegetables and vegetable dishes are called subzee. During my youth summer vacations in India, once I'd be lounging in my grandmother's home, I'd sometimes hear the vegetable seller melodiously yell out the names of all the vegetables on his big flat wooden cart as he pushed through the local streets. I would run outside and stop him while my grandma caught up, and then I would watch her pick though the vibrant vegetables to pick the best ones. If my mother and I were out shopping or sightseeing and then we missed the vegetable cart in the day or we desired to take home some extra veggies, then we'd stop by the local vegetable shop and choose some veggies to make for supper. The shop owner sat in the center of the elevated store with his scale, surrounded all. He would place measured weights on the end, and the vegetables on one end of the scale to price it for us. Then he would wrap the vegetables in papers, and we would set them in our bag and walk home, in expectation of the subzee Grandmother would prepare!
