Iodine is a mineral found naturally in certain foods. It is a significant component of triiodothyronine and thyroxine, which are known as thyroid hormones. These hormones regulate various significant biochemical reactions, comprising enzymatic activity and protein synthesis, which are important determining factors of metabolic activity. Iodine is a significant component in the development of fetus and infant, production of thyroid hormone, and holds critical nutritional value at all the stages of human life. Lack of iodine rich diet can lead to developmental and functional abnormalities. Severe iodine deficiency can result in preterm delivery, low birth weight, early abortion, hypothyroidism, mental retardation and neuro-cognitive impairment. Iodine is majorly found in sea foods, animal proteins and to certain extent in foods like milk, cereals and bread. This book provides comprehensive insights on iodine and its intake. The readers would gain knowledge that would broaden their perspective regarding this mineral and its health effects.

Iodine, a key component of thyroid hormones, is considered an essential micronutrient for proper health at all life stages. Indeed, an inadequate dietary intake of iodine is responsible for several functional and developmental abnormalities. The most serious consequences of iodine deficiency include hypothyroidism, early abortion, low birth weight, preterm delivery, neurocognitive impairment, and mental retardation. On the other hand, the consequences of mild-to-moderate iodine deficiency, such as goiter, are less well understood but represent an important priority for research and public health practice. Over the last several decades, many countries across the globe have introduced mandatory salt iodization programs, which have dramatically reduced the number of iodine-deficient countries. However, despite substantial progress worldwide, mild-to-moderate deficiency is still prevalent even in many developed countries. Thus, the ongoing monitoring of the population iodine status remains crucially important, and attention may need to be paid to vulnerable life stage groups.

Low Iodine Diet for Beginners A Low Iodine Diet, often abbreviated as LID, is a specialized dietary regimen that restricts the intake of iodine-rich foods and ingredients in order to minimize the presence of iodine in the body. Iodine is an essential mineral that plays a crucial role in the normal functioning of the thyroid gland and, by extension, the overall health of the human body. However, there are specific situations where a reduction in iodine intake becomes necessary, and this is where a Low Iodine Diet becomes relevant. Iodine is primarily obtained through the consumption of various foods, with some being naturally high in iodine, while others may contain it as an additive or preservative. High-iodine foods typically include seafood, seaweed, dairy products, and iodized salt. These foods are important sources of iodine for most people and are essential for maintaining a healthy thyroid. However, for individuals with certain medical conditions, such as thyroid cancer or autoimmune thyroid diseases, a temporary reduction in iodine intake may be recommended as part of their treatment plan. The essence of a Low Iodine Diet lies in minimizing iodine consumption to a level where the thyroid gland is temporarily deprived of this essential element. This temporary iodine depletion serves a specific medical purpose. The thyroid gland absorbs iodine to produce thyroid hormones, primarily thyroxine (T4) and triiodothyronine (T3). These hormones are instrumental in regulating the body's metabolism, energy production, and the proper functioning of various organs and systems. By implementing a Low Iodine Diet, the aim is to create a state of iodine deficiency in the body, thus prompting the thyroid gland to become less active. This decreased thyroid activity is desirable in certain medical scenarios, especially prior to radioactive iodine treatment or radioactive iodine scans, which are commonly used in the diagnosis and treatment of thyroid disorders, particularly thyroid cancer. When the thyroid gland is less active due to iodine deprivation, it becomes more susceptible to absorbing radioactive iodine, making it a more effective target for medical procedures.
