En este libro, Faustino Cordón se aparta un tanto de su formulación habitual, en el terreno de la ciencia estricta, para descender al de la divulgación. ¿«Descender» ? Error. Se da el caso de que este hombre de ciencia es al mismo tiempo un escritor muy notable, cuya aportación a la claridad del lenguaje científico español es un presente de raro valor. Sobre el tema de la cocina se ha hecho, y se hace, mucha literatura, lo cual es digno de encomio. Pero faltaba el dato científico, la autoridad científica que asentara el placer de comer y el arte de confeccionar comida, con todas sus implicaciones vitales y sensuales, en la verdad profunda del nacimiento biológico del ser humano. Éste es el principio y fundamento. Xavier Domingo, primer director de esta colección, fue quien tomó la iniciativa de incitar a Faustino Cordón a, como él mismo dice, «meterse entre sus cazuelas». Faustino Cordón aceptó el reto, y nos explica aquí, con la nitidez que el lego en esas materias necesita, «su convicción de que la palabra y, por tanto , el hombre, que se define por su facultad de hablar, sólo ha podido originarse en homínidos (sin duda muy evolucionados ya en el manejo de útiles) precisamente cuando se aplicaron a transformar, con ayuda del fuego, el alimento propio de otras especies en comida adecuada para ellos».
