The Cuban Table is a comprehensive, contemporary overview of Cuban food, recipes and culture as recounted by serious home cooks and professional chefs, restaurateurs and food writers. Cuban-American food writer Ana Sofia Pelaez and award-winning photographer Ellen Silverman traveled through Cuba, Miami and New York to document and learn about traditional Cuban cooking from a wide range of authentic sources. Cuban home cooks are fiercely protective of their secrets. Content with a private kind of renown, they demonstrate an elusive turn of hand that transforms simple recipes into bright and memorable meals that draw family and friends to their tables time and again. More than just a list of ingredients or series of steps, Cuban cooks' tricks and touches hide in plain sight, staying within families or being passed down in well-worn copies of old cookbooks largely unread outside of the Cuban community. Here you'll find documented recipes for everything from iconic Cuban sandwiches to rich stews with Spanish accents and African ingredients, accompanied by details about historical context and insight into cultural nuances. More than a cookbook, The Cuban Table is a celebration of Cuban cooking, culture and cuisine. With stunning photographs throughout and over 110 deliciously authentic recipes this cookbook invites you into one of the Caribbean's most interesting and vibrant cuisines.

"In this first ethnomusicological analysis of ancient Andean musical instruments, Dale Olsen breathes life and humanity into the music making of pre-Hispanic cultures in the northern and central Andes. Assessing three decades' worth of anthropological findings from diverse collections, museums, tombs, and temples, Olsen asks, "What did music mean in the lives of these pre-Columbians?" Part musical quest, part adventure of the mind, the book explores why, when, and how the instruments were played and provides a tangible link not only to a wealth of material culture but to the spirit of these ancient people as well."--BOOK JACKET.Title Summary field provided by Blackwell North America, Inc. What Is Democracy written by Alain Touraine and has been published by Routledge this book supported file pdf, txt, epub, kindle and other format this book has been release on 2018-02-07 with Political Science categories.

In this sequel to A Critique of Modernity, Alain Touraine questions the social and cultural content of democracy today. At a time when state power is being increasingly eroded by the economic might of transnational capital, what possible value can we ascribe to a democratic idea that is defined merely as a set of guarantees against the totalitarian state? If democracy is to survive in the postcommunist world, Touraine argues, it must accomplish two urgent goals: It must somehow protect the power of the nation-state at the same time as it limits that power (for only the state has sufficient means to counterbalance the global corporate wielders of money and information); and it must reconcile social diversity with social unity and individual liberty with integration. This is not merely a philosophical problem but a dilemma whose resolution will dramatically affect the immediate future of people everywhere. If we want a resolution in democracy's favor, then it is time, in Touraine's view, for us to redefine democracy in terms of active intervention rather than mere passive institution. To preserve the power and effectiveness of our states and societies, we must make visible strides?and soon?away from a politics of particularity and toward the integration and balancing of women and minorities, of immigrants, of rich and poor. If our states become too weakened, too debased by the politics of competing identities and interest groups, we will one day find ourselves without the means to protect the very values we believe we are fighting to uphold.

Food Bioactives And Health written by Charis M. Galanakis and has been published by this book supported file pdf, txt, epub, kindle and other format this book has been release on 2021 with Bioactive compounds categories.

Bioactive natural compounds have gained attention in recent years due to their potential health benefits, including reducing the risk of diabetes, cancer, and cardiovascular diseases. These benefits derive from bioactive compounds' anti-tumor, anti-inflammatory, anti-oxidative, anti-hypertensive and anti-hyperlipidemic activities, which serve in addition to their basic nutritional functions. Over the last decade, researchers have investigated the health impact of bioactive compounds in detail, and the development of food applications has attracted great interest. Consumer demand has surged for functional foods (nutraceuticals), superfoods, and tailor-made foods, generated by supplementing traditional food products with bioactive ingredients. Food Bioactives and Health offers comprehensive coverage of the properties and health effects of food bioactives in view of new trends in processing, food science and food technology. Starting with the metabolic characteristics of polyphenols, glucosinolates, and other food bioactives, the text then dives into their impact on human health and recent applications in the world of food technology. For food scientists, food technologists, and product developers looking to understand the role of food bioactives in health and develop applications in personalized nutrition, functional foods and nutraceuticals, Food Bioactives and Health serves as a one-stop reference. Charis M. Galanakis is a multidisciplinary scientist in agricultural sciences as well as food and environmental science, technology, and sustainability, with experience in both industry and academia. He is the research and innovation director of Galanakis Laboratories in Chania, Greece, an adjunct professor of King Saud University in Riyadh, Saudi Arabia, and the director of Food Waste Recovery Group (SIG5) of ISEKI Food Association in Vienna, Austria. Encyclopedia Of The World S Endangered Languages written by Christopher Moseley and has been published by Routledge this book supported file pdf, txt, epub, kindle and other format this book has been release on 2008-03-10 with Foreign Language Study categories.

The concern for the fast-disappearing language stocks of the world has arisen particularly in the past decade, as a result of the impact of globalization. This book appears as an answer to a felt need: to catalogue and describe those languages, making up the vast majority of the world's six thousand or more distinct tongues, which are in danger of disappearing within the next few decades. Endangerment is a complex issue, and the reasons why so many of the world's smaller, less empowered languages are not being passed on to future generations today are discussed in the book's introduction. The introduction is followed by regional sections, each authored by a notable specialist, combining to provide a comprehensive listing of every language which, by the criteria of endangerment set out in the introduction, is likely to disappear within the next few decades. These languages make up ninety per cent of the world's remaining language stocks. Each regional section comprises an introduction that deals with problems of language preservation peculiar to the area, surveys of known extinct languages, and problems of classification. The introduction is followed by a list of all known languages within the region, endangered or not, arranged by genetic affiliation, with endangered and extinct languages marked. This listing is followed by entries in alphabetical order covering each language listed as endangered. Useful maps are provided to pinpoint the more complex clusters of smaller languages in every region of the world. The Encyclopedia therefore provides in a single resource: expert analysis of the current language policy situation in every multilingual country and on every continent, detailed descriptions of little-known languages from all over the world, and clear alphabetical entries, region by region, of all the world's languages currently thought to be in danger of extinction. The Encyclopedia of the World’s Endangered Languages will be a necessary addition to all academic linguistics collections and will be a useful resource for a range of readers with an interest in development studies, cultural heritage and international affairs.
