The study of European wild food plants and herbal medicines is an old discipline that has been invigorated by a new generation of researchers pursuing ethnobotanical studies in fresh contexts. Modern botanical and medical science itself was built on studies of Medieval Europeans' use of food plants and medicinal herbs. Caper: The Genus Capparis presents a pharmacognostic and ethnopharmacological exploration of the genus Capparis, emphasizing its medicinal potential. There is a long history of safe usage of Capparis parts both in diet and as plant drugs throughout the world, and the details of this usage are summarized in 39 tables covering numerous Capparis species. This detailed survey of historical and traditional medical uses of capers provides a forum for the integration of ethnomedicine and modern pharmacology. This book tracks the use of the genus Capparis from the present position of caper fruit and its flowers as a niche culinary article of economic importance, to ancient times and its use in traditional medicine of the Mediterranean and the Middle East. Section I covers the various classes of compounds found in Capparis that hold potential for being physiologically and medically active, including alkaloids, flavonoids, vitamins, and proteins and amino acids. Desde este concreto prisma regulatorio se analizan también los nuevos desafíos que surgen de la globalización. El estudio comprende, en particular, elementos del derecho sanitario (en sus dos vertientes, la legislación farmacéutica y de los «productos de cuidado personal y cosméticos»), del derecho alimentario (incluyendo elementos no armonizados de legislación especial, como especias, infusiones o bebidas) y del derecho agrario (desde cuyo ángulo se abordan los mecanismos de protección de especies y variedades vegetales, así como los específicos del conocimiento tradicional destinados a su legítima bioprospección, recientemente regulados por la Unión Europea). Pedro Díaz Peralta es Doctor en Derecho por la Universidad Complutense de Madrid. Cuenta con una amplia experiencia docente en la Universidad Complutense, que ha compaginado con estancias de investigación en Universidades europeas y americanas. Fruto de éstas ha sido una serie de publicaciones internacionales sobre los ilícitos y regímenes de responsabilidad aplicables en el tráfico global de alimentos y OGM, el régimen regulatorio comparado de medicamentos y sus residuos y el análisis de otros casos de legislación «de doble umbral».
