Cette étude ethnologique s’appuie sur la reconstitution ethnohistorique du mode alimentaire, quotidien comme festif des Européens d’Algérie avant leur « rapatriement », puis en France depuis 1962. Il met en évidence des influences extérieures déterminantes ainsi qu’un phénomène pragmatique, attaché à la revendication et à l’affirmation identitaire qui ont mené les Pieds-noirs à définir une aire culturelle alimentaire unique par l’adoption de caractéristiques culinaires diverses. Le premier axe s’attache à observer les cuisines des origines nationales des Européens en Algérie, avant 1962, à partir des témoignages ethnobiographiques recueillis et transcrits, puis la cuisine des Pieds-noirs en France. Ceci montre que cette cuisine pied-noire est issue d’un paysage culinaire diversifié fait, à partir des cuisines des origines nationales, des emprunts par commensalité festive et par relations intergénérationnelles entre femmes. Les processus sont décrits sur plus d’un siècle ; ils conduisent les Européens d’Algérie à transformer leur cuisine, puis à en créer une nouvelle. Le second axe dresse une analyse interprétative de la cuisine pied-noire, faisant apparaître sa nature symbolique, rituelle et patrimoniale. Après 1962, cette cuisine pied-noire est certes une cuisine de recettes, comme les livres l’ont présentée, mais elle est surtout l’expression d’une revendication identitaire patrimoniale et mythique placée entre savoir-faire et saveurs. L’oral a apporté sa dimension sacrée et vivante, basée sur le don, l’aliment-mémoire, le plat festif et la patrimonialisation sacralisatrice.

The French of Algeria, as they are commonly called today, remain a distinct yet waning subculture. Aspects of their lives continue to provide fertile ground for the media, including, most recently a widely published discussion of the use of torture and murder by French generals during the Algerian War (1955-1962). Publications continue to proliferate on all aspects and from all sides of the French Algerian experience as the time passed permits unprecedented examination of this controversial period in history from 1830 when European colonization began until today. The Pied-noirs continue to contribute to the rich multi cultural world of contemporary France but their actual experiences remain a largely taboo topic in a country, like that of the U.S. in Vietnam, hasn't fully come to terms with the scars left by colonization, settlement and ultimate defeat. This work shows the tremendous influence of Pied-noir on French local and regional elections and discusses the profound effect that the first waves of French Algerians had on the political and economic cultures of Southern France and on the civil service (particularly the gendarmarie and local administration) this group portended. Also discussed is the relationship of Algerian French to the harkis or Algerian Arab supporters of Algerie Francais. Finally the research examines the political fabric of the community and its suprising influence on both the French Left and Right.
