She was a gregarious person, and always more than willing to share her food, recipes and knowledge to anyone who had an interest. To her, the most important ingredient in cooking is the love that one puts into the dish.Madam Krishnan’s family hailed from Pondicherry, a French colony in South India, which was why most of her dishes had some French influence. Her husband’s family was from Kerala, South India and she had to learn Keralite cooking to please her in-law’s palate. Since young, Padma and her siblings had the privilege of enjoying choice cuisines from both Kerala and Pondicherry. The recipes in this book are mainly from Madam Krishnan’s repertoire of recipes, and Padma also shares some recipes that are exclusive to their family. Also included in the book are some recipes that Padma has modified and improved to give the traditional recipes a new twist and also to suit the tastes of the younger generation. This book of South Indian recipes is compiled by Madam Krishnan’s daughter, Padma. In publishing her mum’s recipes, she hopes to preserve the South Indian heritage, so that the future generation can enjoy traditional, authentic South Indian dishes. This open access book discusses the impact of human-induced global climate change on the regional climate and monsoons of the Indian subcontinent, adjoining Indian Ocean and the Himalayas. It documents the regional climate change projections based on the climate models used in the IPCC Fifth Assessment Report (AR5) and climate change modeling studies using the IITM Earth System Model (ESM) and CORDEX South Asia datasets. The IPCC assessment reports, published every 6–7 years, constitute important reference materials for major policy decisions on climate change, adaptation, and mitigation. While the IPCC assessment reports largely provide a global perspective on climate change, the focus on regional climate change aspects is considerably limited. The effects of climate change over the Indian subcontinent involve complex physical processes on different space and time scales, especially given that the mean climate of this region is generally shaped by the Indian monsoon and the unique high-elevation geographical features such as the Himalayas, the Western Ghats, the Tibetan Plateau and the adjoining Indian Ocean, Arabian Sea, and Bay of Bengal. This book also presents policy relevant information based on robust scientific analysis and assessments of the observed and projected future climate change over the Indian region.
