Excerpt from Practical Studies in Fermentation: Being Contributions to the Life History of Micro-Organisms The new ideas which I brought forward in my practical studies in fermentation were at first favourably received by a few only of my colleagues, but were, on the contrary, opposed by most of them. I am glad to be able to state here that some of my former opponents may now be counted amongst the most active supporters of my work. I regard this as the greatest tribute which could be paid to it. Notwithstanding the success which in different countries attended my endeavours at reform, I had in reality to fight an unbroken battle for its progress; every step had to be gained by a struggle, and it is this which has to a large extent put a characteristic stamp upon the following re searches. A great incitement to me in this case, as always, has been the desire to contribute to that literature, the object of which is to prove to the outside world that we in Denmark earnestly take our share of the work of progress, and that, notwithstanding all political reverses, our little nation is still able to develop and carry out independent scientific research. In conclusion I have much pleasure in expressing my best thanks to Dr. Miller for the great interest and care which he has bestowed upon the translation of my work. Excerpt from Microbes and the Microbe Killer The first edition of this book, published in 1890, gave the world a new theory and established new principles. Its teachings were that there is only one disease - decay that it is caused by fermentation; and that all fermenta tion is caused by microbes. It was sent forth as a mes senger that the doors of Science had been opened, and the seed scattered has borne abundant fruit. For the most part, the organisms assigned to them resemble plants in their general characters. They are parasites which derive their nutriment from other living beings. Excerpt from Micro-Organisms and Fermentation The present book gives an account of the morphology and biology of the micro-organisms of fermentation, and it thus forms a complement to the text-books which treat mainly of the chemical side of the subject. I have attempted to give a general review of all the knowledge we possess in the above-mentioned field, and have described the various methods of investigation which in the course of time have proved of importance. In discussing the organisms of fermentation and their relation to industry, there are two names which in a high degree especially attract our attention, namely, Pasteur in the older literature, and Hansen in the more recent literature of our subject. Since this book is intended to give an account of the present stand-point of the science, it is evident that the investigations from the Carlsberg Laboratory must occupy an important position. In Chapters V. and VI. will be found an accurate description of Hansen's theoretical investigations on the alcoholic yeasts, of his methods for the pure cultivation and analysis of yeast j likewise an account of the practical employment of his pure yeast, and of the results obtained with it in breweries, distilleries, and pressed yeast factories, and in the preparation of wines from the grape and other fruits. Fermentation and the use of micro-organisms is one of the most important aspects of food processing, an industry worth billions of US dollars world-wide. From beer and wine to yoghurt and bread, it is the common denominator between many of our foodstuffs. In his engaging style Professor Charles Bamforth covers all known food applications of fermentation. Beginning with the science underpinning food fermentations, Professor Bamforth looks at the relevant aspects of microbiology and microbial physiology, moving on to cover individual food products, how they are made, what is the role of fermentation and what possibilities exist for future development. Internationally respected author Coverage of all major uses of fermentation in the food industry Practical coverage of food processing in relation to fermentation A comprehensive guide for all food scientists, technologists and microbiologists in the food industry and academia, this book will be an important addition to all libraries in food companies, research establishments and universities where food studies, food science, food technology and microbiology are studied and taught.

The pace of progress in fermentation microbiology and biotechnology is fast and furious, with new applications being implemented that are resulting in a spectrum of new products, from renewable energy to solvents and pharmaceuticals Fermentation Microbiology and Biotechnology, Second Edition builds on the foundation of the original seminal work, extending its reach to reflect the multidisciplinary and expansive nature of fermentation research and advancements. While retaining valuable information from the previous edition including a brief history of the industry, as well as an overview of instrumentation and fermentor design, fermentation kinetics, and flux control analysis, the second edition addresses numerous topics that have risen to prominence in the past few years. New chapters explore the diverse array of microbial biosynthetic pathways currently used by the fermentation and pharmaceutical industries for the production of primary and secondary metabolites such as amino acids, vitamins, antibiotics, immunosuppressants, and anti-tumor agents. The authors also examine recent advances in enzyme and co-factor engineering and cell immobilization with respect to both novel drug development and improved yields from microbial processes. Beyond pharmaceuticals, this volume considers the emerging role of fermentation in the conversion of renewable resources to fine chemicals, as well as its potential use in converting lignocellulosic waste to ethanol. In addition, readers will also discover new chapters devoted to discussions of industrial issues such as modeling and sensor technology, as well as supervision and control in the fermentation process. The text is packed with examples and case studies from the industry, carefully chosen to illuminate and reinforce principles and methodology discussed in the chapters. Organized and written in a concise and lucid manner that requires only a general background in microbiology, this volume meets the needs
