Modern Methods in the Analysis and Structural Elucidation of Mycotoxins presents available methods of analysis and structural elucidation of mycotoxins by recognized experts in the various disciplines. The approach in each chapter of the book is to present each method initially in theoretical terms and then to review the method as it specifically applies to the analysis and/or structural elucidation of mycotoxins. Comprised of 15 chapters, the book's opening chapters deal with screening, sampling, and survey methods for mycotoxins and toxigenic fungi. This is followed by chapters dealing mostly with methods for structural elucidation, such as NMR and X-ray crystallography and IR and UV spectroscopy, as well as biosynthetic techniques. Significant chapters consider the analytical methods for mycotoxin analyses, including enzyme-linked immunosorbent assay system and tandem mass spectrometry. The concluding chapter examines the mycotoxin analytical problem in taxonomic or ecological terms. This book is of value to food and feed researchers, scientists, and manufacturers who are interested in product contamination control.

Mycotoxins - toxic secondary metabolites produced by mycotoxigenic fungi – pose a significant risk to the food chain. Indeed, they may be the most hazardous of all food contaminants in terms of chronic toxicity and legislative limits on their levels in food and feed continue to be developed worldwide. Rapid and reliable methods for the determination of both mycotoxigenic fungi and mycotoxins in food and feed are therefore essential. This book reviews current and emerging methods in this area.Part one focuses on the essentials of mycotoxin determination, covering sampling, sample preparation and clean-up and key determination techniques, such as chromatographic separation, liquid chromatography-mass spectrometry and immunochemical methods. Part two then goes on to describe quality assurance, official methods and performance criteria for determining mycotoxins in food and feed. Topics covered include laboratory accreditation, method validation and measurement uncertainty. The development and analysis of biomarkers for mycotoxins are discussed in part three. Individual chapters focus on detecting exposure in humans and animals. Part four is concerned with the processes involved in determining mycotoxigenic fungi in food and feed. It also describes the identification of genes and gene clusters involved in mycotoxin synthesis, as well as DNA barcoding of toxigenic fungi. Finally, part five explores some of the emerging methods for mycotoxin analysis, ranging from bio-sensing to spectroscopic techniques. With its distinguished editor and international team of contributors, Determining mycotoxins and mycotoxigenic fungi in food and feed is a standard reference for all those concerned with reducing mycotoxin contamination in the food chain. - Focuses on the essentials of mycotoxin determination, covering sampling, sample preparation, clean-up and key determination techniques - Documents quality assurance and official methods and performance criteria for determining mycotoxins in food and feed - Explores the processes of determining mycotoxigenic fungi in food and feed including the identification of genes and gene clusters

In our view, the First International Penicillium and Aspergillus Workshop held in Baarn and Amsterdam in May, 1985, was a great success. The assembly in one place of so many specialists in these two genera produced both interesting viewpoints and lively discussions. But more particularly, a remarkable cohesion of ideas emerged, borne primarily of the realisation that taxonomy has passed from the hands of the solitary morphologist. The future of taxonomy lay in collaborative and multidisciplinary studies embracing morphology, physiology and newer methodologies. Penicillium and Aspergillus Workshop was borne logically The Second International from the first, and was held in Baarn on May 8-12, 1989. It was attended by 38 scientists from 16 countries. At this Workshop we have attempted to move further into new methods, especially by bringing together molecular biologists, medical and food mycologists and biochemists as well as more traditional taxonomists. We feel that the meeting contributed greatly to dialogue between taxonomists, and also fundamental and applied mycologists. At the meeting, we became aware that the approach to taxonomy of these genera is now becoming more pragmatic, with an increasing emphasis on consensus, and on stability of names. This is a noteworthy development, which we, as editors, welcome. So many species in Penicillium and Aspergillus are economically important in biotechnology, foods and medicine, and practical, stable taxonomy is of vital importance. These Proceedings comprise 40 papers divided into 9 chapters.

Adherence to regulatory limits for mycotoxins in agricultural commodities is important to safeguard consumers and to permit trade in affected commodities across international borders. Reliable estimates of mycotoxin concentrations are required to implement regulatory decisions on the suitability of lots of produce for consumption or trade. Effective schemes to test for mycotoxins depend not only upon sound analytical methods, but also on well designed and implemented sampling plans. This manual provides information to food analysts and regulatory officials on effective sampling plans to detect mycotoxins in food. The concepts of uncertainty and variability in mycotoxin test procedures are discussed as well as the importance of ensuring that samples are representative of the lot being sampled, and the consequences of a poorly designed sampling plan on the reliability of the measured levels of mycotoxins, possibly resulting in legal disputes and barriers to trade.

Mycotoxins are toxins produced by aerobic, microscopic fungus under special conditions of moisture and temperature. They colonize in a variety of foods from harvest to the grocer. Mycotoxins have gained world wide interest in recent years with the revelation of the effect of these toxins on health. A current example is the presence of ochratoxin A, a human carcinogen and nephrotoxin, in wines. The increased concern about fruit safety has led to increased studies throughout the world and enhanced awareness for stringent regulations governing mycotoxin limits in food.Presented in three defined sections, this is the first book to provide comprehensive analysis of the main mycotoxins contaminating fruits and vegetables and their derived products. The first section provides a safety evaluation of mycotoxins in fruits and vegetables, details regarding factors affecting mycotoxin production and diffusion in the fruit tissue, and recent methods for detection of mycotoxigenic fungi and mycotoxins produced by the fungi. The second part takes a critical look at the main individual mycotoxins and the third section focuses on approaches for prevention and control. - The first book dedicated to mycotoxins in fruits and vegetables - Presents mycological, mycotoxicological and phytopathological aspects of fruits and vegetables - Includes an analysis of detection, prevention and control methods for mycotoxigenic fungi and the mycotoxins they produce - Provides a complete risk assessment and safety evaluation of mycotoxins in perishable produce

Chemical defence by means of toxins poisonous to other organisms, be they animals or plants, is widespread amongst the plant kingdom - including microorganisms as well. This book embraces the analysis of a wide range of plant toxins and this fills a gap in the plant pathology and ecological biochemistry fields. The topics covered include toxic extracellular enzymes, host selective toxins, elicitors, phototoxins, aflatoxins, mycotoxins, and ecotoxic substance tests by pollen germination and growth. The analytical procedures, which are used to evaluate the toxins, are covered in such a way that the reader is able to carry them out mostly solely by following the detailed descriptions.
