Les évolutions des modes de vie, de l’agriculture, du commerce et de la distribution, ou encore des médias et des réseaux sociaux, entraînent des changements alimentaires, tant sur le plan des pratiques que sur celui des représentations. L’analyse des modalités, des causes et des conséquences de ces transformations met en lumière l’importance de facteurs économiques, sociaux et culturels. Elle fait ressortir les spécificités du Laos, mais aussi ses points communs avec les autres pays qui connaissent ces mutations alimentaires. Pour cela, l’auteure mobilise la notion de « transition alimentaire », comme cadre conceptuel pour analyser les changements alimentaires de la population laotienne, mais s’en affranchit aussi pour effectuer une observation plus fine de l’alimentation dans toutes ses dimensions, à l’échelle des familles comme des individus. Elle aborde les questions de la diversification alimentaire, de l’occidentalisation de l’alimentation, du lien entre le local et le global, de la résilience et de l’adaptation.
