Kann es als Spiegel der Nahrungsgewohnheiten im 19. Jahrhundert dienen? Was sagen die Rezepte über die Verfügbarkeit von Lebensmitteln aus? Spiegeln die Rezepte die tägliche Nahrungsaufnahme wider? Wenn ja, welcher soziale Adressatenkreis wird hier angesprochen? Als Untersuchungsgegenstand für die Bearbeitung der Forschungsfrage werden sowohl die Erstausgabe im Nachdruck von Henriette Davidis "Praktisches Kochbuch – Für die gewöhnliche und feinere Küche" (1844) wie auch die Original-Ausgabe der 32. Auflage von 1892 verwendet. Letztere zeigt nicht nur die Entwicklung des Kochbuchs auf sowie die sozialen, politischen Veränderungen auf, sondern führt erstmals Luise Holle als Neubearbeiterin dieses Kochbuches ein. So entsteht ein Blick von Mitte bis Ende des 19. Jahrhunderts, bei der eine Bewegung in den Nahrungsgewohnheiten wahrzunehmen ist. Zunächst durch veränderten Zugang zu Nahrungsmitteln im Zuge der Industrialisierung und nicht zuletzt durch technische Errungenschaften bei der Küchenausstattung, was die Zubereitungszeit der Speisen verringern könnte.
