Having spoken to a number of people who are 'Just about managing' or even struggling to produce meals on a tight budget I fear the reason is not just financial but many lack confidence when it comes to cooking and trying new recipes. With such people in mind, I spent some considerable time writing this book. I am not a professional chef, just a prudent pensioner sharing her numerous years' experience of living well on a budget. Planning ahead can reduce waste and save money. I show how I plan for a few days ahead, over a period of 21 days together with recipes. Each recipe is for 2 adult portions. I begin with an empty cupboard, I show shopping lists for ingredients needed, together with cost. I buy meat and free range eggs from a local butcher. Over all the average cost of each meal works out at around �2. (At January 2018)This is calculated on full prices, it could be reduced by taking advantage of offers. A friend who uses my recipes was delighted to find organic carrots reduced as they were on the best before date and made soup for her family for 25p.I hope too, the video clips and recipes on the Prudent Pensioner's page of my website help.
