Studies on the evolutionary aspects of diet and molecular studies included in this volume indicate that human beings evolved on a diet that was balanced in the essential fatty acids (EFA). In fact, the ratio of omega-6/omega-3 EFA was 1/1 whereas present day diets in both developed and developing countries have a much higher ratio, between 5/1 and 50/1. Additional studies show that a high ratio of omega-6/omega-3 EFA is detrimental to health and may lead to the development of chronic diseases. Improving the dietary ratio by decreasing the omega-6 fatty acids and increasing the omega-3 fatty acids is essential for brain function and for the management of cardiovascular disease, arthritis and cancer. A ratio of 4/1 or less leads to lower dosage and to the reduction of adverse effects of drugs. This volume should be of interest to a large and varied audience of researchers in academia, industry, and government; cardiologists, geneticists, immunologists, neuroscientists, and cancer specialists; as well as nutritionists, dietitians, food scientists, agriculturists, economists and regulators.

Over the last several years developing human research suggests that a component of omega-3 fatty acids, long chain ones, contribute particularly to health benefits. Omega-6/3 Fatty Acids: Functions, Sustainability Strategies and Perspectives focuses on developing information on this newly recognized key component. This volume uniquely, and for the first time, focuses on sustainability of natural sources of omega-3 fatty acids variants including long chain ones, and on ways to increase their use and availability to reduce major diseases. The authors review cardiovascular disease, neurological changes and mental health and other diseases like diabetes where long chain omega-3 fatty acids play protective roles from recent human trials. Each chapter evaluates developing information on the possible mechanistic role of long chain omega-3 fatty acids. After showing their requirement and involvement in health promotion there are reviews of various sources and ways to protect and promote them. Authors provide support for the benefits and sources of long chain omega-3 fatty acids and their increased dietary intake that reduce various physical and mental illnesses. Omega-6/3 Fatty Acids: Functions, Sustainability and Perspectives is a unique and important new volume that provides the latest data and reviews to physicians who need to assess serum omega-6/3 and fatty acids to help diagnose risks and change diets and to inform industry and the scientific community with reviews of research for actions including new studies and therapies.

On June 24-26, 1985, a major International Conference on the Hea1th Effects of P01yunsaturated Fatty Acids in Seafoods was held in Washington, D. C. The conference had two objectives: (1) to review the research data on the health effects of polyunsaturated fatty acids in seafoods in terms of the impact of omega-3 fatty acids on eicosanoid formation, thrombosis and inflammation, and the role of docosahexaenoic acid in membrane function and metabolism, and (2) to develop a research agenda to determine the spectrum of the health effects of polyunsaturated fatty acids of seafood origin in the American diet. The 1985 conference established the fact that omega-3 fatty acids of marine origin - eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) - play important roles in prostaglandin metabolism, thrombosis and atherosc1erosis, immunology and inflammation, and membrane function. In response to the conference recommendations, the Congress of the United States provided special funding for the establishment of a "test materials 1aboratory" within the US Department of Commerce to produce under documented quality contr01 the types and quanti ties of omega-3 te~3t materials required by biomedica1 researchers. The forms of test materials to be produced include refined fish oil, polyunsaturated fatty acid enhanced triglycerides, concentrates of esters of fatty acids, purified omega-3 fatty acids, and omega-3 mono-, di- and tri~lyceride mixtures.

The evidence that omega-3 fatty acids are essential for human development and most helpful to achieve good health throughout life is clearly documented by Dr. Joyce Nettleton in her new book Omega-3 Fatty Acids and Health. Omega 3 fatty acids are produced by the plants of the land and sea. The tissues of the body require the omega-3 fatty acids for their proper functioning just as they also need the omega-6 essential fatty acids. It is probable in man's evolutionary development that there has always been the proper balance between these two groups of essential fatty acids, but in the modern era with the provision of inexpensive vegetable oils it is possible that the pendulum for increased dietary omega-6 fatty acids in the form of linoleic acid has swung too far and the intake ofomega-3 fatty acids has actualIy declined. In particular, the 22 carbon omega 3 fatty acid, docosahexaenoic acid, which has six double bonds, is important in the membranes of brain cells, heart muscle cells, the rods and cones of the retina and spermatozoa. Docosahexaenoic acid is found only in foods such as fish and other sea life, having been synthesized by the phytoplankton of the waters. An outright deficiency of omega-3 fatty acids has led to a number of distur bances in animals and human infants such as impaired vision, abnormalities of the electroretinogram, of the eye and various behavioral aberrations.

It's true. Specific fats play a crucial role in protecting us from many serious diseases - from heart disease to cancer to manic-depressive illness. Certain fats also have an impact on such everyday complaints as dry skin, intestinal troubles, and achy joints. The problem for most of us is that we hear only about one or two of these "good fats" and figure that by including some healthy oils in our diets, we're covered. What we don't realize is that by not understanding what makes a "good fat" good, we unknowingly create imbalances in our systems that may lead to these terrible disorders - despite our best intentions. In The Omega-3 Oils, pioneering researcher and physician Dr. Donald Rudin tells us how we can improve our physical and mental health by correcting these imbalances. Dr. Rudin shows how different fats act within our body, and how modern food-processing techniques have stripped a vital family of oils - the Omega-3 fatty acids - out of our food. He discusses his groundbreaking Omega-3 study, in which people suffering from a variety of chronic ailments showed remarkable improvement after taking oil rich in Omega-3, in combination with other healthful supplements. He then shows the connection between Omega intake and a variety of modern-day health concerns, including heart disease, skin problems, reproductive difficulties (in both men and women), pregnancy and breastfeeding, mental health, and the problems we experience as we age. Finally, Dr. Rudin presents the Omega Program to help bring our diet, and our health, back into balance.

For more than half a century, the relationship between dietary factors and coronary heart disease (CHD) has been a major focus of health research. Contrary to the established view, current data suggest that dietary cholesterol is not a primary factor of or causes heart disease - with the possible exception of the genetic forms of familial hypercholesterolemias. For instance, recent clinical trials evaluating the effect of cholesterol-lowering drugs on the development of chronic heart failure, diabetes and stroke have yielded disappointing results. On the other hand, an unbalanced omega-6/omega-3 fatty acid ratio and a cholesterol intake not consistent with the amount during evolution seem to be causal factors in the development of CHD. A panel of international experts in genetics, nutrition, fatty acid, cholesterol, metabolism and coronary heart disease has contributed to this publication, summarizing and critically discussing for the first time the importance of evolutionary aspects of diet, the omega-6/omega-3 fatty acid ratio and cholesterol intake relative to health and CHD. They also propose measuring blood fatty acids in the population in order to define the risk of CHD and other chronic diseases. This book will be of interest to physicians (cardiologists, gerontologists, and pediatricians), nutritionists, dieticians, health care providers, scientists in industry and government and policy makers.

Omega-3s, trans-fats, polyunsaturated fatty acids, linoleic acidùresearch facts about fatty acids and their relationship to heart disease and atherosclerosis, obesity, cancer, and neurological disorders abound. Chemical names appear on every nutrition label. But, just what do these terms mean in health and disease? The Fats of Life delineates the importance of essential fatty acids, with a focus on distinctions between omega-3 and omega-6 fatty acid variants. The chemical and biochemical characteristics of these fatty acids and their metabolism to a vast array of potent bioactive messengers are described in the context of their potential effects on general health and impact on various diseases and neurological disorders. Glen D. Lawrence addresses in detail the capacity for polyunsaturated fatty acids to influence asthma, atherosclerosis, heart disease, inflammation, cancer, and immunity. Lawrence makes clear that our understanding of the biochemical and physiological effects of dietary fats has advanced tremendously as a result of careful research, but he also stresses that this knowledge has not easily translated into sound dietary recommendations.
