Pecan [Carya illinoinensis (Wangenh.) C. Koch] is a species distributed over an area of varied geographic and climatic variation in the Unites States and Mexico providing a potential for anatomical and physiological adaptation within the cultivars and provenances (i.e., the area of origin of seed). An assessment of leaf anatomical traits of pecan cultivars (Pawnee, Mohawk and Starking Hardy Giant) collected from three locations (Tifton, GA., Chetopa, KS., and Stillwater, OK.) was conducted to provide an understanding of patterns of ecogeographic variation within the natural range. The stomatal density 'Pawnee' (404 stomata/mm2) was intermediate between that of 'Mohawk' (363 stomata/mm2) and 'Starking Hardy Giant' (463 stomata/mm2). There were differences among the three pecan cultivars at the same location but there were no differences in stomatal density within the same cultivar grown at three distinct locations. The study suggested that differences in stomatal density in pecans are cultivar-specific rather than being determined by environmental factors. The stability of certain leaf anatomical characteristics, such as stomatal density, for pecan cultivars grown at different locations confirms that these traits can be used for screening provenances with desirable leaf anatomical characteristics for breeding and cultivar development. To achieve the objective of studying anatomical, morphological and physiological traits, Mexican and U.S. provenances grown at the Pecan Genetics and Breeding Program facility in Somerville, Texas were used. The prominent results from the provenance study indicate the presence of intra-specific variation in pecan provenances for the morphological and anatomical traits along the east-west gradient. It is also interesting to note that western provenances displayed the least stomatal density (350 stomata/mm2) while an eastern provenance showed the greatest stomatal density (728 stomata/mm2). This trend may be explained with the gradient in moisture availability from the wetter conditions in the east to the arid conditions in the west in North America. Most of the physiological traits measured did not show any distinct differences between the provenances. There is a great possibility that anatomical traits like stomatal density are genetically controlled to a great extent in pecan in comparison to the physiological traits.

Pecan [Carya illinoinensis(Wangenh.) K. Koch] is a native North American nut tree that has progressed into a significant agricultural crop. Flavor characteristics were evaluated for sixteen pecan cultivars: 'Giles', 'Hirschi', 'Maramec', 'Oswego', 'Lakota', 'Chetopa', 'Colby', 'Witte', 'Dooley', 'Kanza', 'Pawnee', 'Stuart', 'Chickasaw', 'Peruque', 'Major', and 'Henning' using descriptive sensory analysis. A trained panel consisting of six panelists first developed a vocabulary for the raw pecans and scored the intensities of the samples for 20 flavor attributes. Results showed that the sixteen samples differed significantly (P ≤ 0.05) on 10 of the attributes. 'Giles', 'Lakota', and 'Pawnee' differed from the other 13 cultivars for the majority of the attributes. The remaining thirteen cultivars showed few differences in individual attribute ratings, but did show differences when mapped using multivariate techniques indicating as many as two clusters of pecan cultivars based on flavor. The same sixteen cultivars were then roasted and evaluated using descriptive sensory analysis by the same trained panel using the same 20 flavor attributes. Three texture attributes were also evaluated. These results were compared to the results from the raw pecans. Results showed that 4 attributes differed significantly across all cultivars when raw and roasted flavor was compared. Ten of the flavor attributes had higher intensities for the roasted pecans than for the raw pecans. Most of these attributes fell within the categories of 'nutty' and 'sweet'. When pecans were roasted many flavor attributes were intensified, as compared to when they were raw. How the flavor of the sixteen cultivars changed over a 12 month period was then evaluated. Raw pecans were evaluated when fresh, at 3 months, 6 months, 9 months, and 12 months by descriptive sensory analysis. A trained six member panel evaluated four flavor attributes at all five time points. Results showed that bitter had the highest intensity scores for all 16 cultivars at all 5 time points. Rancidity increased over time and sweetness decreased over time for all attributes. The results from these studies can be used as a baseline for future pecan research.

Flavorwise and texturewise pecans are the "Queen of the Edible Nuts. " This has been verified by salters, bakers, confectioners and ice cream manufacturers in America and western Europe. Hickory nuts and macadamia nuts are close behind, but are available only in limited supply. Pecans are among the nuts highest in oil content. In general, the varieties of nuts with the highest oil content are also rich in flavor and tender in texture. Some varieties of pecans (i. e. , Schley and Curtis) have been shown to contain as much as 76% oil. The oil in pecans is highly unsaturated, which means it is desirable from a nutritional standpoint but that it is also highly susceptible to oxidation which can cause pecans to tum stale and rancid. Pecans used in confections, bakery goods, cereals, or in snacks are more subject to staleness and rancidity than most nuts because these products are often stored at ambient temperatures. For this reason, pecans are considered to be semi-perishable and are not used in some "fine" products due to their limited shelf-life. Research at the Georgia Experiment Station has shown that raw pecans or most pecan products may be held in good condition for more than 20 years if freezing is the mode of preservation. However, development of new products demands that pecans be stored at ambient temperatures for extended intervals. Pecan 'meat' is easily bruised during shelling and handling.
