Plant polyphenols are specialized metabolites that constitute one of the most common and widespread groups of natural products. They are essential plant components for adaptation to the environment and possess a large and diverse range of biological functions that provide many benefits to both plants and humans. Polyphenols, from their structurally simplest forms to their oligo/polymeric versions (i.e. tannins and lignins), are phytoestrogens, plant pigments, antioxidants, and structural components of the plant cell wall. The interactions between tannins and proteins are involved in plant defense against predation, cause astringency in foods and beverages, and affect the nutritional and health properties of human and animal food plants. This eighth volume of the highly regarded Recent Advances in Polyphenol Research series is edited by Juha-Pekka Salminen, Kristiina Wähälä, Victor de Freitas, and Stéphane Quideau, and brings together chapters written by some of the leading experts working in the polyphenol sciences today. Topics covered include: Structure, reactivity and synthesis Bioactivity and bioavailability Metabolomics, targeted analysis and big data Quality control & standardization Biogenesis and functions in plants and ecosystems Biomaterials & applied sciences Distilling the most recent and illuminating data available, this new volume is an invaluable resource for chemists, biochemists, plant scientists, pharmacognosists and pharmacologists, biologists, ecologists, food scientists and nutritionists.

rd This book has been developed from the proceedings of the 3 Tannin Confer ence honoring Professor Edwin Haslam, Department of Chemistry, University of Sheffield, for his efforts and outstanding contributions to the field of plant polyphe nols. The meeting was held in Bend, Oregon, July 20-25, 1998, with the objective of promoting collaboration between chemists and biologists to improve our under standing of the biological significance and to expand possibilities for use of plant polyphenols. Special efforts were made to summarize current research on the in nd fluence ofthese compounds on human health. As in our 2 Tannin Conference held in Houghton, Michigan, June 1991, we strove to build the "international" charac ter of this meeting and were rewarded by an attendance of over 150 guests from 23 countries who enjoyed more than 50 lectures and 60 presentations. Our thanks go to all those who contributed to our meeting. A special thanks is extended to Professor G. Wayne McGraw, Department of Chemistry, Louisiana College, Pineville, Louisiana, who served as the financial manager of our meeting. He, his wife Bobbie McGraw, and Helen Hemingway worked hard to make this meeting run as smoothly as possible. We also would like to thank the Bend Chamber of Commerce, Central Oregon Community College, The Riverhouse, Interstate Tours, Wanderlust Tours, and the people of Bend for welcoming our group to Central Oregon.

In this book, the effect of nutritional habits and wine consumption on ageing and the main degenerative diseases (cardiovascular, cancer, Alzheimer's, etc.) are considered through the most relevant epidemiological and pharmacological studies. Newly isolated wine polyphenols and tannins are presented and their structures and in vitro biological properties are discussed that could strongly support the hypotheses that those molecules could insure beneficial health effects. This book will be of particular interest to people involved in problems of public health, but also in the wine industry or in wine making, as well as to physicians who are concerned by the difficult question of ageing and its related chronic diseases.
