Concerns have grown that consumption levels of salt are well above those needed for nutritional purposes and that this can lead to adverse effects on health, in particular cardiovascular disease. Consumers are increasingly looking to reduce their salt intake, making salt reduction a priority for food manufacturers. This is not straightforward, though, as salt plays an important role in food preservation, taste and processability. Written by a team of international experts, Reducing salt in foods provides a unique review of current knowledge in this field. This book is divided into three parts and discusses the major issues concerned with salt reduction and how it may be achieved. Part one reviews the key health issues driving efforts to reduce salt, government action regarding salt reduction and the implications of salt labelling. Consumer perception of salt and views on salt reduction and are also discussed. The second part focuses on the technological, microbiological and sensory functions of salt and strategies that can be taken to reduce salt. The final part of the book outlines strategies which have been taken to reduce salt in particular food groups: meat and poultry, seafood, bread, snack foods, dairy products and canned foods. Reducing salt in foods is an essential reference for health professionals, governments and food manufacturers. Discusses methods to reduce salt while maintaining food sensory quality, shelf-life and processability Provides a unique review of current knowledge in this field An essential reference for health professionals, governments and food manufacturers

Learn how much fun intermittent fasting can be while eating a sweet or salty snack every day. Intermittent fasting is easy and fun when you add a weird twist. Each day I fasted for sixteen hours and then I ate two thousand calories of healthy food and a tasty snack...every day for thirty days. I learned that I can eat a snack every day and not gain weight. I wasn't trying to lose weight this month (January). Instead, I wanted to know if I could eat a snack each day and not gain back the weight I lost when I first started intermittent fasting (I lost 30 pounds in two months). I learned that it is more fun to install variety into a diet than to stick with the same thing every day. I ate cornbread crisps, lentil snaps, cinnamon apple chips, Twix-flavored popcorn, maple walnuts, coconut chips, freeze dried apple slices, almonds, yogurt covered raisins, asiago pepper jack crisps, tropical fruit trail mix, and a bunch of other tasty snacks. This was a fun month. The secret to my success this month was intermittent fasting. I consumed calories for eight hours a day (from 10 am to 6 pm) and fasted the evening, night, and morning hours. I also recorded exactly what I ate using the phone app MyFitnessPal. I pay for an annual membership and love knowing exactly what is going into my body, even when I eat cookies or drink a beer. This keeps me from overeating or giving in to a sugar urge at night. I lost 21 pounds in September, and 9 pounds in October, and maintained my weight in November and December. In January, I continued the diet and experimented with snacks. If you want to learn about my fascinating journey, then read this book. This is the fifth book in a series on intermittent fasting: Intermittent Fasting and Walking 10,000 Steps Every Day Intermittent Fasting and eating BEANS every day Intermittent Fasting and eating from a JAR every day Intermittent Fasting and eating a SANDWICH every day Intermittent Fasting and eating a SNACK every day

For many, Detroit is the crunch capital of the world. More than forty local chip companies once fed the Motor City's never-ending appetite for salty snacks, including New Era, Everkrisp, Krun-Chee, Mello Crisp, Wolverine and Vita-Boy. Only Better Made remains. From the start, the brand was known for light, crisp chips that were near to perfection. Discover how Better Made came to be, how its chips are made and how competition has shaped the industry into what it is today. Bite into the flavorful history of Michigan's most iconic chip as author Karen Dybis explores how Detroit "chipreneurs" rose from garage-based businesses to become snack food royalty.
