Flavor modification of the soy cheeses could be achieved by adding hydrolyzed vegetable protein, protease, lipase, and additional microorganisms. The dry method used very little water, and its low water activity may have been responsible for its inconsistent fermentation time, which made the production of soy cheese by this method very inconvenient. Sensory evaluations were conducted on soy cheeses produced by the wet method. Most of the soy cheeses were acceptable to the panelists. The soy cheeses had pleasant, bland flavors and were essentially free of the beany flavors associated with soy products. Soy cheeses resulting from the wet method had a pH of 5 and a water activity of 0.99, and contained about 68% moisture, 21% fat, 9% protein, 1.2% salt. The moisture content was much greater than that of typical cheese, so its texture is more that of a cheese spread than a hard cheese such as Swiss or Cheddar.
