Definitions of urban entities and urban typologies are changing constantly to reflect the growing physical extent of cities and their hinterlands. "Territorios en movimiento. Sistemas agroalimentarios localizados, innovación y gobernanza" pretende enmarcar el debate sobre tres grandes temas de las ciencias sociales en la actualidad: el territorio, la cultura alimenticia y la gobernanza socio-económica, con sus conflictos y promesas para el desarrollo. El primero, es el lugar con recursos específicos, construcción socio-cultural del espacio y de normas formales e informales que regulan las relaciones de los habitantes. Por su parte, la vinculación del territorio con los alimentos expresa un proceso histórico de anclaje que involucra espacio, clima, cultura y construcción de relaciones sociales e institucionales. Finalmente, la gobernanza, aunque es un concepto polisémico, se refiere a la emergencia de las sociedades locales, así como a la coordinación de las instituciones, normas, regulaciones y asociaciones a diversas escalas geográficas en un espacio dado. La conjunción entre territorios, alimentos y entramado institucional ha dado origen a políticas de indicaciones geográficas, sellos de calidad, denominaciones de origen y marcas colectivas que implican la interacción de los actores sociales y los gobiernos, las instituciones internacionales y las organizaciones locales. Este libro contiene aportaciones de destacados investigadores en temas de desarrollo territorial, localización de sistemas agroalimentarios y gobernanza y políticas públicas bajo una perspectiva que integra la producción, la transformación de los alimentos y el consumo en sus diversos aspectos, desde la formación de cadenas cortas de comercialización y mercados locales unidos al turismo, o al simbolismo de las fiestas religiosas. El lector puede encontrar aproximaciones teóricas a estos temas y estudios de caso sobre productos específicos como el nopal, los quesos típicos y el cultivo de frutillas. Desde mediados del siglo XX y hasta la actualidad, la Argentina apostó a la industrialización y la urbanización como estrategia de desarrollo. Dentro de este contexto, el mundo rural no fue pensado como territorio de vida, sino y ante todo como un lugar privilegiado para producir materias primas y divisas para sostener el Estado y múltiples dimensiones de la vida nacional. El resultado de esta estrategia nacional y la invisibilización y el desconocimiento de los problemas del mundo rural terminaron consolidando un país profundamente urbanizado, desequilibrado, y con grandes desigualdades en términos de oportunidades y calidad de vida. Este libro describe esta realidad, pero además, y como punto clave, pone el acento en analizar cómo en las últimas décadas se están generando, en el mundo rural argentino, dinámicas que contribuirían a construir un nuevo mapa de la Argentina, dinámicas que se exacerban y potencian día a día, especialmente a partir de la crisis por el covid-19. La hipótesis que guía este libro es que los nuevos procesos emergentes, como la migración de la ciudad al campo, el cambio tecnológico en la producción y las comunicaciones, las nuevas formas de relación con la naturaleza, la diversificación productiva y la valorización del patrimonio biocultural, entre otros, tienen la capacidad necesaria para crear un nuevo modelo de organización y desarrollo rural, si es que se aplican las políticas correctas. Este nuevo modelo rural contribuiría también a cambiar el paradigma de desarrollo argentino, que todavía se sigue basando en la sustitución de importaciones, la industrialización y la urbanización. El libro define y caracteriza el modelo de organización y desarrollo de los territorios rurales que podría emerger, y avanza finalmente con un conjunto sencillo de ideas claves para la construcción y consolidación de este modelo.
