Excerpt from The Babcock Test There are several causes for the variations in the percentage of fat in pure milk. One of the most import ant is the breed of the cows. N ext comes the individual of the breed. The percentage of fat in the milk of an individual in extreme cases may average either one per cent. Above or one per cent. Below the breed average. Also, the percentage of fat is affected by the length of time since the cow has freshened. It is a well-known fact that toward the end of the lactation period, when the cow is being dried off, the milk contains a higher percentage of fat than it did earlier in the season. It is also fairly well established that, when the time elapsing between milkings is not of equal length, the milk drawn after the longer period contains the lower percentage of fat. There are also minor influences affecting the fat content, such as a feverish condition of the animal or over-excitement, due to dogging or other ill treatment that might cause the cow to hold up part of her milk, thus giving a larger proportion of the milk that is first let down, which is not so rich in fat as the strippings. It has become a well-established fact that the character of the food of an animal has very little effect on the percentage of fat in the milk, although it has a marked effect on the amount of milk and fat produced. Excerpt from Comparison of Methods of Sampling Cream for Testing It is conceded that the Babcock test, properly manipulated, is the easiest and the most accurate and economical means in the hands of the creamerymen for testing milk and cream for fat, and that the points of dispute and subjects for popular and scientific discussion are more intimately associated with systems of sampling. It is not the purpose of this investigation to advocate any one method of sampling as being accurate above all others; for it is perfectly clear that if it should appear that any or all the systems give equally good results, they would not all be applicable to every condition. For example: our larger, and many of our smaller, centralizers pay for each delivery or shipment of cream. This, in itself, presupposes the testing of every can of cream as it arrives, and the system of sampling automatically regulates itself. It will further appear that the experience of the operator, the number of patrons, and the business principles followed, all modify the test ing system. Excerpt from The Connecticut Agricultural Experiment Station, New Haven, Conn: Bulletin No; 119, May, 1894, the Babcock Test as a Basis for Payment in Cream-Gathering Creameries The Bulletins of this Station, usually issued quarterly or oftener, are mailed free to citizens of Connecticut who apply for them, and to others, as far as the limited editions permit. Applications should be renewed annually before January 1st. The matter of all the Bulletins of this Station in so far as it is new and of permanent value will be made part of the Annual Report of the Director. All Bulletins earlier than No. 71 and also Nos. 83, 92, 93, 100, 101 and 109, are exhausted and cannot be supplied. Bulletin 118, a Bibliography of Exp. Station literature relating to Fungous Diseases, is to be included in the l7th Annual Report which will be shortly ready for distribution. The Annual Report of this Station, printed at State expense, is by law limited to an edition of 12,000 copies, of which 5,000 copies are bound with the Annual Report of the Connecticut State Board of Agriculture, and distributed by the Secretary of the Board, T. S. Gold, West Cornwall, Conn. After exchanging with other Experiment Stations and Agricultural Journals, the Reports remaining at the disposal of the Station will be sent to Citizens of Connecticut who shall seasonably apply for them, and to others as long as the supply lasts. The growing tendency in education is to give a larger and larger proportion of time to the study of things that pertain to everyday life. Every man, woman and child uses in one or more forms the products of the dairy cow. In Western Wash ington many families and many communities depend upon dairying for their principal income, many others keep a family cow, and many depend upon buying all milk, butter, etc., consumed. In any case, all are interested in the most economical production of high class dairy products. Dairy cows vary greatly in the amount of milk and butter fat they will produce and in the economy of production. Many will yield a large profit but many will not pay for their feed with the best of care and are correctly termed star boarders. The majority of dairy herds contain some star boarders eating up the profits produced by better members of the herd. Many dairymen realize they are not clearing much money but are unable to detect the boarders. There is no more important thing to be taught in a region as de pendent upon dairying for its development and prosperity as Western Washington than the best method for selecting a good cow, and there is no better channel for the dissemination of this knowledge than through the public schools. There are two methods in use for the selection of a dairy cow: 1. The use of the Babcock test and the milk scale. 2. Selection of a cow from physical makeup.
