Farms in New France is given as cattle, sheep and swine.1' By 1765 the number of animals in Canada was shown to be oxen, young cattle, cows, sheep and swine.2 With the coming of. The United Empire Loyalists and the establishment of settlements in the Eastern Towns-hips of Quebec and in Ontario, live, stock were introduced into those sections of the country. The founding of the Red River settlement, during the early part of the nineteenth century, resulted in the introduction. Of cattle west of the Great Lakes. During the early stages of development, live stock were slaughtered mainly for home consumption, the surplus meat finding an outlet In the adjoining towns and lumber camps and to a limited extent in export trade. Cattle were delivered on the hoof to retail butchers who operated their own slaughter houses. Hogs and sheep were usually slaughtered on the farm. As larger urban centres emerged local packing plants came into being. These drew their supplies from farther afield but the method of marketing continued to be the most direct possible, namely, from producer to packer either by direct sale or through the medium of local buyers or drovers. Stockyards. - The development of an export trade in cattle, beginning about 1870, resulted in an expansion of the live stock industry and caused supplies to be drawn from still more remote areas. The first Stockyards were established to provide facilities for the assembling and handling of large numbers of live stock at the head of ocean navigation. Later central yards were established, often by the railway companies, on which a number of dealers operated. The first to be established was the Montreal Stockyards at Point St. Charles which commenced operations in 1885. The Toronto Stockyards were established in 1888. Excerpt from Local Livestock Markets in Relation to Corn-Belt Hog Marketing Consideration of direct marketing as such has not been a primary objective either in conducting the study or in assembling its results. It is not a question, with any competent economist or Open-minded student, whether he favors or opposes direct marketing; the question is what plan of marketing will put stockmen in a more effective selling position and lessen the burdensome spread between producer and consumer. Never have conditions in the livestock marketing field appeared more unsettled. Everything is in flux. Just what will emerge, no one knows. No longer afraid of change, all desire that if a new system is to come it may be more efficient and more economical than what has been. During the shifting process many irregularities and inequalities will appear, with resulting price penalties to stockmen. Whatever the new system may be, stockmen can expect to receive full benefits only to the extent to which they put themselves in position to claim them. Excerpt from Changing Marketing Channels for Farm Foods Food processing companies that adopted direct marketing established sales organizations and facilities for selling directly to the many small retail stores. 'warehouses, commonly called branch houses, were maintained in the larger cities from.which products were distributed to retail stores. The meatpacking companies had railroad car routes (and later truck routes) to supply retailers in smaller cities and towns. Refrigerator cars loaded with packinghouse products were sent out along regular routes to make deliveries to buyers along the way. Processing companies that had a relatively full line of products could sell to retailers more easily and at a lower selling cost than those having a more limited line. Economies of scale could be achieved in selling and distribution, as well as in. Production. The advantage of having a full line encouraged companies to diversify their product mix, sometimes by merging with companies that manufactured different products. These decisions, combined with the feeding program, to a large extent determine the time and average weight of subsequent feedlot marketings. Depending on current conditions, feeders have some latitude in the time and weight of marketing fed cattle, but this flexibility is limited to a rather short time.
