Reducing the intake of sodium is an important public health goal for Americans. This guideline provides the first global, evidence-informed recommendations on the consumption of potassium to reduce NCDs in most adults and children which WHO had developed. The recommendations in this guideline can be used by policy-makers, technical and program planners in the government and various organizations involved in the design, implementation and scaling-up of nutrition actions for public health and prevention of NCDs, to assess current potassium intake levels relative to a benchmark and develop measures to increase potassium intake, where necessary, through public health interventions including, but not limited to, food and product labelling, consumer education, and the establishment of food-based dietary guidelines (FBDG). The guideline should be used in conjunction with sodium and other nutrient guidelines to develop and guide national policies and public health nutrition programs.

Iodine is an essential micronutrient and an integral component of the thyroid hormones, which are required for normal growth and development. The iodine deficiency disorders (IDD) encompass a spectrum of adverse health effects including goiter, cretinism, hypothyroidism, growth retardation, and increased pregnancy loss and infant mortality. This volume summarizes the current understanding of the effects of iodine deficiency as well as iodine excess. It also discusses best practices for salt iodization, the mainstay of global IDD prevention efforts, and other forms of food fortification. The effectiveness of iodine supplementation for vulnerable populations, an evolving strategy in many regions, is also described. Low level environmental exposure to chemicals such as perchlorate and thiocyanate, which competitively block thyroidal iodine uptake, appears to be ubiquitous worldwide. There has been recent concern that such environmental exposures might pose a health hazard by inducing or aggravating underlying thyroid dysfunction. Iodine, a key component of thyroid hormones, is considered an essential micronutrient for proper health at all life stages. Indeed, an inadequate dietary intake of iodine is responsible for several functional and developmental abnormalities. The most serious consequences of iodine deficiency include hypothyroidism, early abortion, low birth weight, preterm delivery, neurocognitive impairment, and mental retardation. On the other hand, the consequences of mild-to-moderate iodine deficiency, such as goiter, are less well understood but represent an important priority for research and public health practice. Over the last several decades, many countries across the globe have introduced mandatory salt iodization programs, which have dramatically reduced the number of iodine-deficient countries. However, despite substantial progress worldwide, mild-to-moderate deficiency is still prevalent even in many developed countries. Thus, the ongoing monitoring of the population iodine status remains crucially important, and attention may need to be paid to vulnerable life stage groups.
