Des années 1650 au milieu du XIXe siècle, le territoire de production du vin de Cahors connut une période d'expansion et de changements liée au dynamisme du port de Bordeaux. L'espace viticole s'étendit au-delà de la ville couvrant les campagnes du Quercy de part et d'autre du Lot. La croissance démographique enclenchée au XVIIe siècle favorisa les défrichements et la mise en culture de nouvelles terres. Cette tension sur les ressources se retrouve dans les structures foncières caractérisées par une extrême parcellisation. Au XVIIe siècle, la vigne, remarquablement bien implantée, restait une culture secondaire pour la plupart des catégories sociales, puis au cours du XVIIIe siècle, les hommes s'orientèrent massivement vers la production de vin afin de répondre à l'appel du marché. Cet investissement se traduisit par l'encépagement des terres traditionnellement destinées aux céréales et par de meilleurs soins apportés aux vignes. En cherchant à satisfaire une demande extérieure relayée par les négociants des Chartrons, les Quercinois privilégièrent le cépage auxerrois, appelé aujourd'hui malbec, assurant ainsi l'élaboration d'un vin rouge presque noir. Sa commercialisation vers l'Europe du Nord et les Antilles en fit un produit vulnérable au tournant du XVIIIe siècle. Malgré une conjoncture difficile à la fin de l'Ancien Régime, le vignoble poursuivit sa progression dans la première moitié du XIXe siècle. L'omniprésence des activités viticoles conféra une identité spécifique à ce territoire encore réelle aujourd'hui. À la fois vignoble suburbain, populaire et bourgeois, et vignoble paysan, le vignoble de Cahors offre un modèle original qui se différencie de nombreuses régions viticoles étudiées jusqu'alors.
