It is a common belief that in France the study of medieval literature as literature only began to gain recognition as a valid occupation for the scholar during the nineteenth century. It is well known that historians of the sixteenth, seventeenth and eighteenth centuries looked to the literary productions of the Middle Ages for materials useful to their researches, but it is only recently that the remarkable frequency of this reference has been appreciated and that scholars have become aware of an unbroken tradition of what might best be described as historically ori ented medievalism stretching from the sixteenth century to our own. The eighteenth century has drawn the greatest number of curious to this field, for it is evident that the surprisingly extensive researches undertaken then do much to explain the progress made a century later by the most celebrated generation of medievalistst. Very slowly we are coming to see the value of the contribution made by little known schol ars like La Curne de Sainte-Palaye, Etienne Barbazan and the Comte de Caylus.

'We have two cuisines in France, that of the north and that of the south', boldly stated the first cookbook directly concerned with southern French cuisine in 1830. This book investigates the reasons for and background to these differences, specifically in Provence. In the absence of cookbooks for the region in the 18th century, it uses innovative methodologies relying on a range of hitherto unexplored primary resources, ranging from household accounts and manuscript recipes to local newspapers and gardening manuals that focus on the actuality of the 18th century Provençal table. The sources emphasise the essentially seasonal and local nature of eating in Provence at this time. In many ways eating habits echoed generalised French patterns, according to class, but at the same time the use of particular foods and culinary practices testified to a distinctive Provençal food culture, partly related to geographic and climatic differences but also to cultural influences. This food culture represented the foundation for the Provençal cuisine which was recognised and codified in the early 19th century. From a diverse archive of documents has emerged new evidence for the cultivation and consumption of potatoes and tomatoes in Provence and for the origins and evolution of emblematic dishes such as bourride, bouillabaisse and brandade. In linking the coming-of-age of Provençal cuisine to post-Revolutionary culture, in particular the success of restaurants and the flourishing of gastronomic discourse, this book offers a new understanding of the development and evolution of regional cuisines.

Originally published in 1968. The contribution of eighteenth-century Englishmen to the study of medieval life and literature is fairly well known, but it is commonly assumed that in France, the center of Enlightenment, no one—with the exception of a few obscure antiquarians—was seriously interested in the Middle Ages. Gossman argues that the Enlightenment gave great impetus to medieval studies in France and altered their orientation, removing them from the realm of legal and ecclesiastical dispute and bringing them into a new framework of general history. Concentrating his investigation of Enlightenment medievalists on the most influential of them, La Curne de Sainte-Palaye, Gossman describes Sainte-Palaye's social and intellectual milieu and follows him in his relations with scholars and philosophes in France and abroad. Voltaire, Montesquieu, Gibbon, Walpole, Muratori, and Herder are some of the figures whose paths crossed that of Sainte-Palaye. Far from being opposed to philosophie, the medievalists were, Gossman argues, nourished at the same intellectual sources and shared many of the values of the philosophes. The existence of a close connection between medievalism and the Enlightenment is substantiated by the author's detailed analyses of Sainte-Palaye's work in the history, literature, and language of the French Middle Ages. Although Sainte-Palaye had a surprising influence on the literature and historiography of both the eighteenth and nineteenth centuries—in France, England, and Germany—eighteenth-century medievalism, Gossman argues, is best understood not as anticipation of things to come but as part of a complex of ideas and feelings peculiar to the Enlightenment itself.

Reconstructing the Middle Ages looks at nineteenth-century medievalism in France using as a case study Gaston Paris, philologist, literary critic and professor of medieval studies. Gaston Paris's method, traditionally seen as a combination of romanticism and positivism, exemplifies several elements of nineteenth-century medievalism in the Parisian academia in late nineteenth-century France. The text investigates Gaston Paris's theories about three medieval literary genres (epic, fabliaux, and Arthurian tales) to understand how Paris's view of medieval literature and history cross-related with nationalism at a time when France was particularly vulnerable, and at which French academics were especially eager to make a long-lasting contribution. Examining the work of Gaston Paris and his interaction with other scholars in the Parisian milieu, Reconstructing the Middle Ages offers a look at academic medievalism and the history philology, linguistics and literary and textual criticism in late nineteenth-century France.
